Hi, in this video I make a special ketchup that tastes different than the one made from tomatoes, but is just as good. I struggled a little bit getting the beetroot out of the frozen ground and also had issues with the camera not recording intermittently so some footage is missing. Anyway, the recipe is simple and I think the result is delicious.

Ingredients:
600g beetroot
60g dried prunes
1 clove
1 tsp mustard seeds
0,5 tsp black pepper
1 tsp fermented garlic paste
50ml apple cider vinegar
100ml water
Preparation:
1. Clean the beetroot and divide it when it is large.
2. Steam it for about half an hour to an hour until soft.
3. Soak the dried plums in water.
4. After it has cooled, peel the beetroot and cut it into pieces. Be sure to wear gloves.
5. Finely grind the clove and mustard seeds in a grinder or crush them in a mortar.
6. Put beetroot pieces and spices in a blender jar and add pepper, garlic paste, plums, vinegar and water and blend until well-combined.
7. Pour the ketchup into a clean jar, cover with a tight-fitting lid and ferment at room temperature for 4 to 6 days, then move to cold storage.

Zutaten:
600g Rote Beete
60g Trockenpflaumen
1 Nelke
1 Tl. Senfsamen
0,5 Tl. Pfeffer
1 Tl. fermentierte Knoblauchpaste
50ml Apfelessig
100ml Wasser
Zubereitung:
1. Säubere die Rote Beete und zerteile sie, wenn sie groß ist.
2. Dämpfe sie für eine halbe bis zu einer Stunde, bis sie weich ist.
3. Weiche die Trockenpflaumen in Wasser ein.
4. Nach dem Abkühlen schäle die Rote Beete und schneide sie in Stücke. Trage dabei evtl. Handschuhe.
5. Mahle Nelke und Senfsamen fein.
6. Gebe die Rote-Beete-Stücke und die Gewürze in einen Mixbecher, füge Pfeffer, Knoblauchpaste, Pflaumen, Essig und Wasser hinzu und mixe alles.
7. Fülle den Ketchup in ein sauberes Glas, verschließe es und lasse es 4 bis 6 Tage bei Zimmertemperatur fermentieren. Danach bewahre es im Kühlschrank auf.
