My mom would make something similar to this. It wasn't fermented. She would use a brine and can it. She would use what was left in the garden at the end of the season. Thank you for sharing.

I was at Costco today and rather than buying the individual ingredients to make this recipe, I bought the vegetable tray that had cauliflower, celery, broccoli, peppers, green beans, and carrots in it so I can probably make 2 half gallon jars out of this, so I’m pretty excited about This and hopefully it will turn out great!

I always have a jar of pickled veggies like this for salads and such but not a fermented jar. I love how they look in the large jar. We eat with our eyes first they say and I think this is true.

You make it look so easy, and it probably is pretty easy, yet I'm still a little scared to start fermenting. Maybe it's because I forget things so quickly, like checking in on it. I have a tendency to start out projects with the best of intentions & then rediscover what I started because it turned into a science project & I had to track down what died!!! Up north in the burbs of Chicago where it’s a staple, we pronounce it jar-di-nare. Love the stuff and put it on everything. Can’t wait to make it as a ferment. Will probably add some jalapeños to make it hot too 😅

Fabulous! I pickled gardiniera a couple years ago, but I have discovered I'm not huge on the taste of pickled stuff. Fermenting will give me a healthier product ... and I love the smoother taste of fermented veggies. Thank you!

Thought you’d like to know we made two jars of giardiniera based on watching your video. This was our very first fermentation attempt ever and it has turned out great! It’s saltier than I expected, but still very good. We’ll try it again this summer with different veggies like okra and a small amount of jalapeño. Thanks again for sharing.
