Wow! Interesting. Where I come from, we eat them once they have fully developed into leaves but mostly we chose young leaves that are light green for cooking like how you cook spinach or cabbage. The leaves are stripped off the stem. The darker green leaves we use to cook in earth stone oven we call mumu something similar to native Hawaiians imu. These are cooked whole.
