Boy oh boy. Fideo is one of my favorite comfort foods EVER!! My fave is frying crispy thin pork chops - then browning the pasta in the pork chop oil and adding just a tiny bit of tomato sauce or paste and the water of course. Thanks for a great recipe and God Bless!

Yummy! I make this a lot, minus the potatoes. My wife and kids dont like it so much but I grew up eating this. Wasnt crazy about eating it when I was little but I love it now.

I never had this untill I met my husband and my mother-in-law made it. I absolutely love it. But I grew up not having a lot to eat so I'm not to picky about what I eat. However this dish is delicious and my kids like it as well so I make it weekly.

Looks great! I have been making what i call bacon tomato fideo for years and it is my oldest duaghters favorite. I cook a pound of bacon, toast the fideo in the grease, drain the grease and pat both the bacon and fideo with a paper towel then break the bacon in little pieces before adding a can of diced tomatoes with juice and a can of tomato sauce with the bacon and fideo in a pan and simmer until the fideo is soft. It doesn't look very good but it is awesome.

I agree with toasting the fideo first. It just tastes better, toasty! There are so many variations of fideo. I really like this one! Gonna give it a try this week! The only thing I think I'll do differently, is add tomato sauce.

update - I made this tonight and it was excellent! I made a couple small adjustments. I added 1 chopped carrot and subbed some of the water for a can of el pato sauce. soooo good!

My mom made fideo for us growing up and it was so comforting and filling. She used fresh tomato and onion from her garden. Today she is 80 years old and cooks this for all 7 of her grandchildren. My kids love visiting to have grandmas fideo and clean the pot on every visit. 💕. Food is love and memories.

My daughter got sick in Cancun yrs ago on a trip there so I called the kitchen, explained her condition and wanted chicken soup. They omitted the Jalapeño and it was wonderful soup. Fixed her right up. I never knew til now what those wonderful noodles were.

I was taught to make Fideo by someone who obviously didn't know what she was talking about! Hers involved a can of Rotel and an onion, and although it was pretty good, yours definitely has a lot more going for it! Can't wait to make some now, it is the ultimate comfort food.

I ate some fideo a few nights ago when it was cooler weather jn AZ. I took it out of the freezer, as it freezes well. I have never made it with ground beef, but always with cubed pieces of pork or beef stew meat. I use tomato sauce as well as stewed tomatoes and cilantro. When serving I add whole pinto beans. It is a great comfort food and cheap to make.

Last year, before everything got crazy, I hit a clearance on fideo....$0.05 cents a bag. I bought it all and donated half to my food bank. Fideo is so versatile, we’ve come up with so many yummy combinations. One of our favorites was just a simple garlic butter fideo. Hmm, I think I should try adding chicken to that next time, make it more of a meal. Anyway, definitely giving this recipe a try. (It made me crave picadillo.)

Yum! Mama and Abuelita didn’t add potatoes but count me in! Also, the added a can of Rotel vs water but I welcome options. I will note that my favorite fideo was always when Mama was boiling lengua and used that water instead of her usual can of Rotel. That was always the best! Thanks for bringing back beautiful memories of those two women.
