We had it a lot with ground beef as the main dish, I still make it as a main dish. I grew up in Albuquerque.

White boy from West Texas, who married into a Hispanic family. I’ll never forget the first time I had my mother in laws fideo.. glad im not the only one who calls it “Mexican spaghetti” 😂. I love me some fideo and Picadillo

Idk why but the first time I had fideo was my high school friend's mom who made it. They're white as I am. I loved it! Now I've got my own family and I want to make it but never learned. West Texas also! Been one place or another between Lubbock and Midland my whole life. 🇸🇴🇵🇱

Growing up we ate Fideo at least 4 days a week and loved it. When you mentioned “dichos“, that brought back a funny memory. Back in the 1960s My mom would ask us kids what we wanted for dinner. She would ask, you want enchiladas? We’d say no. She’d then ask, you want frijoles? We’d say no. After so many of our rejections, she’d finally say, “pues come caca!” 😂

In my Mom’s 1950’s Mexican kitchen in So Cal, she used the very thin coiled vermicelli. And we did have it as a side dish. In lean times, there were 13 of us, she would fry up some hot dog “coins” and throw those into the pot. At 72, I still enjoy this homey treat. 👍🏼💕

I grew up in the San Luis Valley,Monte Vista colorado.I love fideos . Somtimes my mama would make little meatballs in the fideo. I m 66 yrs old ,and o how I love fideos. So does my grandaughtet.So yummy!😋

I grew up in the southwest as well (Tucson). Mom is from Tucson and dad is from Texas (Uvalde). Mom made it more like a soup and she just called it “fideo”. I've also heard it called “sopa”. People in the southwest and from northern Mexico serve it more dry as a side dish and call it “sopa seca” (dry soup). Regarding dichos, the one that stands out to me was what mom would say if we had a scrape or a cut or bruise. She’s rub the area lightly and say “Sana sana, colita de rana. Dame un besito para hoy y mañana” which translates to “Heal heal little frog's tail. Give me a little kiss for today and tomorrow.” English is my first language, Spanish my second, and Spanglish my third 😊

Loved reading your comment. And, yep, that dicho was another one that made very little sense but was quite popular. I heard it a little differently. "Sana sana, colita de rana. Si no sanas ahora, sanarás mañana." Then one of my uncles had his own version which I wont bother to repeat! Lol We are so blessed to be bilingual because it's like living in two worlds at the same time.

I make mine with bacon grease instead of cooking oil and instead of water I use beef stock. Once it’s all done I make a molcajete of fresh tomato and chili péquin. I’ve made a lot of pinto beans as well. I make my bowl of fideo, put some beans in it along with my chili and a tortilla. Yummm I sit and enjoy and watch a movie.

I grew up in a Spanglish home as well!! Love-love-love fideos!! Here's a saying I remember growing up. "Sana-sana colita de rana, si no sanas hoy, sanaras manana".

I love the story it made me laugh so cute , I love the picture to your mom she is beautiful. Is that you when you were little you look so cute. I do remember eating this when I was little sometimes on the side and some beans, tortillas or sometimes she would put some meat inside of it. I mean with it. I tried to make it once but it didn’t come out good. I’m glad you made this recipe. I didn’t know it was that easy to make .I’m going to make this . Thank you for sharing your stories love them ☺️💖

I always have called it Fideo... I also sometimes add papitas, to make a caldo, sometimes ground beef . I always make it soupy, never dry. Your Fideo actually looks very inviting 😋

😍 I grew up in Farmington (northern NM). My grandma was from Tucumcari NM , she made this so much when my mom was growing up that my mom didn't make it. BUT I LOVED THEM so my grandma ALWAYS made them for me because they are my favorite! 😅 *A side dish , coiled, but I would eat as the main dish 😂🎉

My mom used to make fideo at least once a week Mom would add chopped tomatoes and sometimes small cubed potatoes to the fideo, served with her homemade flour tortillas. YUM! This is great comfort food especially growing up in a Mexican home.

Awwwww our family was also large. My mother made this dish with pieces of cubed beef and it was absolutely delicious! Throw in some frijoles de hoya and some homemade flour tortillas and it was the perfect dinner. Thank you for your video😋😋😋

Oh my gosh Fideos no matter how prepared as soup or side, with or without meat or potatoes. I loved mine exactly as you prepared them a bit soupy but not too soupy. Oh my goodness it is so delicious yet simple.

White girl married 42 years to mexican american man. I've been making sopa de fideo for years, but I add chicken bouillon and about of half a teaspoon of mexican oregano, and I use chicken broth instead of water. My kids (now grown) and my husband loves it. Another thing I started doing about a year ago was I make the broth in a separate pan to get the flavor exactly how I want it first, because sometimes it wasn't quite right otherwise, lol. I do it for spanish rice too. I love your videos and watch them all! Can't wait to hear how the house hunting/purchase went!

I was born in.AZ. My mom would make video weekly. I had 3 boys and a girl. I used to make the soupy video, especially during winter. I now make it fir myself, good memories. Thank you.

Marcy, I make this a lot and my recipe is almost exactly how you do it. The only difference is that I will use beef or chicken stock. Water has no flavor, so I go with the stock. Also, I buy the Fideo by the case. Thank you for sharing.

I buy that pasta here in Texas, north of Dallas, but they are no longer 4 for a dollar, it's 2 for $1.00. I sometimes brown a handfull of fideos while toasting rice before cooking, adds color to the rice, so you have some brown among the white.

Hi Marcy, Ive come to love your channel and cooking videos. I come from a dual ethnic home My mom was French/Belgium and my dad was Mexican. My mexican grandma taught my mom how to cook for my dad. I remember as a little girl eating fideo. Its such a true comfort food. I pulled up your video and I have a pot of it simmering and will be a side dish with our polla fajitas tonight. Marcy. I’m so thrilled to find this video. My godmother was also from New Mexico. Her father was widowed and moved with her and her younger sister to Sacramento. At the age of 14 my blue-eyed, blonde Irish mother, who lost her entire family, was taken in by this wonderful family. One of the dishes she learned to make and loved was a very dry sopa. It was so similar to your fideo recipe. It was also served with freshly made flour tortillas. I don’t make it too often anymore but I still love it. Thank you.

I live in a retirement village here in Las Cruces with some of the kindest, most generous people to ever live. One day, a neighbor and I were talking and I happened to mention that I’d recently heard of Fidel, but never had it, and none of the local restaurants served it. The next day, she came to my apartment and handed me a very large bowl of Fideo and two chicken legs cooked in her family’s traditional way. I felt like the King of Doña Ana😊😊(And that is why I will never go back to Louisiana, you just can’t beat the fantastic folks here in New Mexico)

I was an anglo kid, who grew up in El Paso, and now lives in Medellín, Colombia. I remember this dish, though I didn't have it regularly. I think I encountered it in the elementary school cafeteria. Anyway, I doubt I'll find fideos packaged here in Colombia but I'll break up some spaghetti noodles and see how it goes. I can see this pairing well with many of your dishes!

Just the way my mon use to make them with the exception of the cumin. She alwas served them with a side of fresh flour tortillas. It must be a New Mexico thing. This is definitely a good thing to make with Lent approaching. Oh and Chile con tortillas se huevo. Wow.

This tastes like Abuela’s home to me. The way she made it was with fried thin pork chops and then zucchini added right at the very end. It was called sopa but more of a stew than a soup and not really a side dish. So delicious with freshly made flour tortillas. It warms my heart to know this same dish, with all its variations, is so loved by so many Mexican Americans and Americans from all over the country ❤️🇲🇽✌🏼

My first memory of eating fideo was in my great grandma Martinez kitchen. She put celery and onion and I remember eating 2 bowls! I finished the book you suggested " The Wind Called My Name" and I loved it! When you said dichos it reminded me of that. Last night we all had a sweet tooth so I made your Arroz con Leche and it was delicious. Love your cooking and hearing your family stories.

Hi Angelina. How sweet that your memory of fideos takes you to your grandma's kitchen. ♥ I think all kids love fideos. Also, I'm so happy you read that book! I thought about that, too. I love that she included a list of those dichos in the back of the book. When I met her in person, I asked her if she'd heard some of the ones I grew up with. I used to get in trouble for singing at the dinner table, and my mom would say, "El que coma y canta loco se levanta." But, I'm proof that wasn't true. (At least, I hope so. Lol)

I've never had this dish so can't wait to try it. I have to tell you again how delicious the apple fritters were. I ate 3 before my husband got home, sent 3 home with my son and he loved them. I have to try that. I grew up eating fideos, but it was almost like soup, I say almost because it wasn't served in a bowl. It was served on a plate next to the beans. It was my favorite. Finally at 59, I'm going to learn how to make fideos. I can cook, I just never learned how to make fideos, for some reason. Ba? Was my father's favorite word. It meant, hmmm or really. Thank you. Fideos is truly like spaghetti. Just adding cumin instead of oregano, and shorten the spaghetti noodles. But we too had several nonsensical sayings from our parents. The one I use the most is: "Where are we going?" Answer, "up Mike, down Jake's". My parents admit it never meant anything.

Hi Marci, I enjoy your videos. I am 62 years old. My mother in Washington state used to make it when I was little and I hated it but yours looked delicious. Maybe I might try it again. You know how taste buds change my family as well used to speak Spanglish and I’m not very good at speaking Spanish bummer😊

I love this. And I would not hesitate to spice up Ramen with these same ingredients. Just cook the ramen in a skillet with the water spice packet and other ingredients.

Hi, Marcy! I’m not Mexican (I’m Irish!) but the Irish have a lot of Spanish I them! I was born and raised in El Paso, TX and also lived many, many years in Las Cruces! This food of southern NM is what I have lived on for so many years! Fideos are so good and I am going to use your recipe because mine is too plain! Thank you for sharing!!

Gosh that looks so delicious. My Mom, not Hispanic, but she cooked Macaroni similar to this, but she added cheese to it, she called it sour Macaroni. It was so delicious.

Oh how we loved fideos. My Gran used to sing "ranna ranna colito de ranna" there is more to it but none of us remember. It was a big giggle fest when she sang it. Gracias Marcy

That's adorable. I can picture the giggle fest. Some others commented on the same saying because that one is very well known. It's "Sana sana colita de rana," with different endings. The one I know was "si no sanas ahora, sanarás mañana." Thanks so much for watching and taking the time to comment.

Love me some fideos, i like it both ways. A side dish was more the way we had it. I loved mixing it with the rice and beans and what ever fell out of the main course "taco, enchilada, tostada.." mom called it my mexican mess. But with a fresh tortillia it was oh so good. I am loving your recipes, they bring me nostalgia. Have you put your fideos in the caldo de res? My abuelita used to add this to the caldo "pa' que rinda" It's delicious!

Our family loves our fideos as a side dish. The soupy fideos are okay, but we really like them as a side dish and thick like spaghetti. My mother-in-law makes the best. However, yours sounds absolutely wonderful. I can't wait to try yours. That was a great idea to add beef to your v Fideos. That would make a great one pot meal for a dinner. I grew up in New Mexico and I speak the language. However, I do have to agree with you. I grew up speaking Spanglish

Oh, Marcy! I just stumbled across your channel while searching for Mexican side dish recipes. I grew up in Southern California but it's amazing how many of our stories are similar when sharing amongst with other Latinos. Growing up, sopa de fideo or sopa de arroz was a side dish staple with almost every meal my grandmother would cook. We often used the term "sopa" interchangeably whether it was rice or fideo. My grandma would make it the soupier way as you mentioned in the video, and kept the noodles long instead of breaking them into smaller pieces. And those "dichos!" I heard the EXACT same ones from my grandparents and my mom growing up. "Dime con quien andas..." If I got in trouble with friends lol. I often asked a lot of questions and was a bit of a chatterbox. Anytime I started asking too many questions, like "where are we going, what are we doing, what's for dinner" my grandfather would reply, "tolondrones!" Which I knew meant "shut up and settle down, kid" lol. I never knew what that meant until my grandmother gave me the full rhyme when I was older, but it was always clipped to "tolondrones!" in my house lol! The memories came flooding back with your stories, my eyes even welled up a little. 🥹 Subscribed con muchos abrazos!
