Sir thats not a beef meat or bone. Thats was Carabao or buffalo meat. R & J is famous for that bulalo in Mandaluyong near the City Hall. Carabao meat is less oily and in our province in Infanta Quezon we dont usually put pechay in our bulalo.

It's fun to watch older people vlog... Recently more and more younger people are vlogging but it's fun to see it in a point of view of an older individual. Having tried all three variations- ceviche, kinilaw, and poke, for my palate, kinilaw wins hands down. I'm glad that here in Cali, I can find pretty much most of the ingredients I need especially kalamansi whenever I'm craving for one. I've experimented on different types of fish from halibut, rockfish, dover sole, but find tuna to be the best. I would love to visit that place when I visit back someday. Best of luck!

as a former Pinoy (short term for Filipino) expat, let me tell you, Sir that Kinilaw works best with the local San Miguel Beer and Tuba (wine coconut). The locals primarily from Visayan region used to get wasted on Saturday nights or whenever there's special occasion. You should go out more and socialize with Pinoy locals that you can trust and get along with. Then you'll see what I mean.

Every region has its own authenticity in terms of "kinilaw recipe". But originally, kinilaw is a visayan term of eating raw foods.

Wow i envy you Mr. Marshall, kilawin is my favorite filipino dish, Bulalo is the best, maybe you should try also eating bulalo in Batangas and tagaytay city. I always watch your blog's everyday here in singapore, its a stress reliever for me and my wife, as we can not travel back home. Im so happy and greatful for sharing and enjoying your adventures in the philippines.

@@marshallbuttersvlogs6880 Glad to hear from you Mr. Marshall, how i wish this pandemic will end soon, its very difficult for us to travel at the moment, because there is a 14 day quarantine procedure when we get back to Manila and even when we comeback here in singapore. We have to pay for it, swab test and 14 days stay in a hotel. Anyway im glad that you are enjoying there, you take good care always. Hope to watch your new blog soon.

Kinilaw can be made differently for each region. So every place is unique.

Yes, indeed, kinilaw has many variants. We have dilis kinilaw in Leyte, made of fresh dilis first soaked in vinegar and calamansi (with a little salt). Afterwards, the dilis is carefully wrapped in clean cloth to squeeze out the liquid. Only then do we mix it with diced ginger, garlic, onion, green onion and (freshly-squeezed) coconut milk, and some chili. I love eating kinilaw only when it is prepared at home by my mother. I can't bring myself to try kinilaw prepared elsewhere.

The best kinilaw i've ever tasted is in Northern Mindanao, Cagayan de Oro City, particularly. They put indigenous local spices that's not found anywhere: the tabun-tabon, and biasong (a kind of small native lemon, aside from the kalamansi which is optional), plus a lot of chili. Makes my mouth water just thinking of it..Yum!

Hi Marshall, Kilawin is a verb while kinilaw is an adjective. Both pertain to the type of meat used, it just depends on how the sentence is constructed. Its like beef stew or stewed beef, both are same.

@@marshallbuttersvlogs6880 Its just filipino grammar, nothing to do with bisaya or tagalog. Since youre in mandaluyong, search PVL restaurant, they've got the biggest siopao in the phillippines, probably the world.

Hi Marshall, thanks for another great vlog. If you can (are allowed to) , try going to Mahogany Market in Tagaytay. You can commute to Tagaytay by getting a bus at PITX bus station, near Mall of Asia. At Mahogany Market, you will find lots of stores selling beef (cheaper than in Manila), fruits, veg, local ground coffee. At the 2nd floor, you will find lots of stalls (like a low end food court) selling bulalo. You can get a set meal, good for 4, for 1k pesos (pre-covid). It has rice, bulalo, veg & tawilis (small fish native to the area). You can also go to other tourist spots in Tagaytay - good for a day trip or short weekend away. Btw, I heard from friends that there's a Chinese tour group which will go to Phuket in Thailand in early October. Thailand will open to tourism but there are many requirements for the STV (special tourist visa). You may want to check it out. Good luck & stay safe! 😊👍

@@marshallbuttersvlogs6880 Hi Marshall, yes, it's coffee that's grown locally, usually from Batangas province & surrounds. There are stalls in the market where you can pick which type of coffee beans (Arabica, Robusta, etc) and have them grind the beans for you. Seems like there are other ppl encouraging you to visit Tagaytay or Antipolo. Btw, there's also a nice Indian resto at/ near Jupiter street in Makati. Not as posh as Shangri-la, but quality eats. Can't remember the name of the place, but the chicken vindaloo was good. Just tell them not too spicy! Cheers - I enjoy your food reviews. You're like Mark Wiens, but not pretentious. 👍😊

You can ask guys baking if they have what you're looking for. Because sometimes they are just cooling it in racks before putting it inside the glass things. It prevents it from being misty if it was cooler.

Ideas: Cloud 9 restaurant in Antipolo Rizal - deckview overlooking Metro Manila Cafe Katharina in Tanay, Rizal Food Parks in Taytay, Rizal (there are a lot) Rise and fall of motels/inns (esp. during pandemic) There is a place in Pasig where u can find a lot of them. Brgy. Oranbo, Pasig. Example: Daisy, Dahlia, Orchids, Victoria, etc. Some of them focus on side services like selling food online so they can keep up and not go into bankruptcy, some couldnt keep up. Some cooperate with govt to serve as quarantine facilities. Simply vlog ur daily life/routine esp focusing now during pandemic vs how it was and/or how it would have been w/o pandemic Etc Etc Etc

Another great vid Marahall. They say the population of Metro Manila is 13 million, but in reality it will be closer to 20 million people. The reason for this is the cost of registering births, and many filipino families do not have that money, so there is alot of unregistered births each day. Anyways keep up the good work with your vids and CHEERS.

Bulalo is good yummy and delicious nbut dangerous, many says it cause your nlood high.. dont eat too much...moderate lang..yung kinilaw naman, good to reduce high blood because of vinegar, garlic and onion..i love kinilaw especially , dilis or tuwakang

The best kinilaw-kilawin i've tasted is from Ilocos Kilawen Kaldeng and the Cagayan De Oro Kilawing De Oro and i promise you that it will taste good if you try it, try go to Ilocos, Northern Luzon or CDO, Central Mindanao. And if we're talking Bulalo, the Batangas and Tagaytay is the best i've tasted, so if you ever go in those province maybe try it out too :)

We put sliced cooked sweet potato in our Ilonggo style kinilaw and mix it with coconut cream..while our local version bulalo is with green langka slices....

kinilaw is a visayan dish, visayan preference normally is to add vinegar to the preparation just prior to serving it, for the reason that the fish will taste like vinegar when soaking it longer. some twist to it is adding coconut milk to the vinegar sauce and mixing it with sliced freshly grilled pork liempo🤗

In our place kilawin is pork( skin and fats ) version of kinilaw( fish ). For westerners it’s called salad. 🙂

Kinilaw I've read somewhere that it originated in the Philippines and when the Spanish came and galleon trade started that's when it was introduced in Acapulco Mexico by Filipino ship crews. But it was named ceviche in Mexico. Filipinos brought many things to Mexico like coconuts, mangoes etc..

Kilawin sometimes is grilled goat skin but not over grilled chop it into small pieces then mix with vinegar, soy sauce chili kalamansi almost same mixture of kinilaw.

To have creamy kinilaw, you can add milk. In the Philippines there's a brand made by Nestle the Alphine evaporated milk in can. just add 1 small can of Alphine milk and mix it with you kinilaw then after mixing put your kinilaw in a freezer for an hour before serving to eat. Don't use sweet milk to mix with your kinilaw like bear brand or Alaska are not good beacause of sweetness. The milk reduces the sourness of the vinegar and taste creamy.

the calamansi is actually used for making a sauce for the bulalo.. try to mix calamnsi and fish sauce with a small portion of chilli..

kinilaw or kilawin is many version of deffirent way to made 1) soake in vinegar like tuna milkfish anchovis even meat and inside meat 2) soake in lemon or calamansi 3) mash or those in graded radish like a salad

Locally it's vinegar from the coconut white or brown use to mix with raw fish, i think it's what the tribes are use to prepare no Spanish or any country of origin, btw you can also try a different kind of kinilaw soy sauce, kalamansi, vinegar, chili mix in 1 container & dip the raw fish meat into it

Oyster is very pricy in Manila bro, my father is from Aklan too and whenever i've visit the province they offer a lot of seafood, like crabs, fish and oyster, kinilaw na isda palang na try ko sa visayan region, yung oyster di ko pa na try yan pero mukhang masarap.

@@ult7511 True. Everything in Manila is pricey. I went in Aklan last year to visit relatives. Grabe they're selling sacks of oysters and ang fresh lahat ng seafood. Seafood heaven. Hope to visit again soon. Hope this pandemic ends

@@shayisbored Yes tol, sarap ng seafood dun, malapit lang din kasi sa dagat, sa Manila kasi puro import ng isda dun kaya mahal na, ung mga isda lang na galing sa fishpond mura. Let's just hope na matigil na ang pandemic para maka-visit ulit tayo sa mga mahal nating probinsya.

Most S.Koreans (I gather from their YT videos) think many Filipino foods have this tendency to be (more) salty. And yes, that is due to the food preservation practices in the early times which got carried to this day.

Luzon's kilawin usually has vinegar alone but the kinilaw i know (am from Samar btw), requires removing or diluting the marinade with coconut milk specifically the first squeeze or kakang gata. Restos here go extra by adding mayonnaise but it's just plain overkill.

visayan kinilaw uses vinegar made from coconut nectar or coconut sap, Tagalog uses sugar kane vinegar. they also add coconut milk on the kinilaw as an option

My favorite fish for kinilaw is bangus (milkfish) and then add a bit of coconut milk. People get put off of bangus because it has a lot of bones but what we do is prepare the dish overnight to melt the bones off. The bones, as a matter of fact, add umami to the dressing. I've prepared this many times for people and it's always been a hit. But they're always surprised to find out it's bangus.

@@marshallbuttersvlogs6880 I hope you do! Unfortunately, it's not a popular fish for restaurants or even carenderia style of kinilaw. It's something you'll have to make yourself. Btw. What's missing from the kilawin you had were freshly diced tomatoes (green and red). It adds color, texture and a variant of sourness.

@@marshallbuttersvlogs6880 Hi. I haven't tried Bagnet on Tomato Salad before but from the looks of it on your vlog, it doesn't have the same consistency of the usual kinilaw. Kinilaw has a wet slightly soupy kind of dressing like the one you had here. But FYI, bagnet wouldn't be strange to add in a kinilaw. In the Visayas, we have a variant of kinilaw called Sinuglaw. A portmanteau of words from Sinugba(Grilled) and Kinilaw. As the name suggests, the meat are both raw fish and grilled pork. It's a common dish for family trips to the beach where grilling is the preferred way of cooking and kinilaw is just something you can prepare on the spot.

When time permits, I suggest you should try the bulalo in Tagaytay (Leslie's) for comparison. I"m sure it's the best.

@Marshall Butters Vlogs - I suggest you go to Mahogany Market in Tagaytay. The ground floor stalls sell beef/ meat & fruits/ veg. In the upper floor, there are several stalls selling bulalo & other viands. You can get a set meal worth 1k pesos, good for 4. It contains a large bowl of bulalo, rice, veg & tawilis (small fish unique to the area). Very masarap goodies. That's pre-covid, I don't know the situation now.

I do agree the put a lot of vinegar on that Kinilaw. Maybe you can tell the chef to put less vinegar next time. Most cooks wouldn't mind doing that. Edit: You can try ordering Grab food and reviewing food items on restaurants that you haven't been before. Saves you the time and money of going outside and selection would be much bigger.

Marshall Butters Vlogs Chill Top and Padi’s Point bars are now open but only until 9-10pm depending on the location. Good place to try Filipino drinks and bar foods. There’s a lot in Mandaluyong near my office before the pandemic.

Love watching your vlogs and your daring, but especially your sensitivity to local culture. I have to say however that you missed the point of BULALO. We eat bulalo for the BONE MARROW. I saw that the kitchen gave you a huge bone and the marrow was BIG. We don't eat it all the time because all that cholesterol is not healthy, hehe. We mix a spoonful of bone marrow with a spoonful of rice and put the whole ensemble in our mouth. Way to go :-)

Instead of vinegar for curing the raw fish, try sparking juice, lt tastes a little sweet sans the fishy smell than that of vinegary taste. Than add mayonnaise instead of coconut milk. It tastes so good less the fishy smell or aftertaste.

Bulalo, is like Caldo de res with the Mexicans. However, the Mexicans dont usually use bones with narrow like Pinoys. Maybe this was introduced to the Phillipines

The bulalo (or nilagang karne) is cooked with cabbage or pechay, green beans, potato and banana "saba" (unpeeled). This is the Tagalog style, per my mom
