Caught some Bonito on a charter one time. The captain used it as bait to catch a shark and then release it. When we disembarked I asked to keep the fish we didn’t use and he said it was a trash fish. I kept it anyway and the next day I bought some charcoal and some olive oil and salt and just cooked it on a grill at a park. It was absolutely delicious just with the salt and oil and it was more satisfying and healthier than any steak I’ve had. I love eating fish and it’s absolutely one of the healthiest meats on the planet.

Wow that sounds gooood! One time I caught a lady fish on a charter and the captain told me it was trash fish but I still wanted to keep it too! I've seen some vids of people eating them on youtube too. Someday I'd like to try one.

I could be wrong here, but this fish looks like sumagatsuo/yaito katsuo which is similar to katsuo but a different species. Suma is said to have higher quality, fattier meat than regular katsuo. Also tends to be rarer and more expensive :) the only time I’ve had this fish was at 69 Leonard St in NYC. Fun facts about other katsuo names in Japanese: hatsugatsuo, early season katsuo caught in the spring, prized for its lean taste. Modorigatsuo, katsuo caught in the fall which is returning from its migration north, fatty from eating all that good stuff. Mayoi katsuo, “lost” katsuo that’s caught out of season in the wintertime outside of its migration cycle. Hagatsuo, a different katsuo species altogether.

Yeah after doing some research it's a Sumagatsuo I'm pretty sure because of the pattern. In the comments people have been saying they call it a false albacore. it seems to be a mix between a mackerel and a tuna. it's dope how there is so many different types!

@@cheffingupwithmark5732 It is a Little Tunny/false albacore. It’s in the same family as tuna, but it’s definitely not a skipjack. It was called bonito too at the market you got it from, bonito is not a species of tuna but rather a family of different species.

Euthynnus Alletteratus - Little Tunny - False Albacore - Bonita is what you cooked, however Katsuwonus Pelamis is a true skipjack tuna. They're both great, i eat Bonita whenever I catch them, just wanted to make a distinction. Also there is a larger blood line area on the little tunny when compared to a skipjack or blackfin, but not by too terribly much.

They aren’t a skipjack but a similar cousin the bonito or false albacore is a lot more oily but I eat one at least once a year as sashimi. Skipjack are a different species entirely they have horizontal bars along their belly.
