Some people say that the hard-shell taco is sacrilegious. It is not a taco and it is not Mexican they say. But actually, that beautifully crispy and fried tortilla filled with cheddar cheese and lettuce does have a Mexican background and we should be very thankful and proud about it. On this episode, our taco guru Francisco Gómez takes us to the heart of California in search for the best hard-shell in town.

OMG this needs to happen more often. A Mexican (foreigner) who speaks English, sharing culture with an American who has Mexican (foreign) heritage. There's so much to learn and find out about all the differences there.

I grew up (I'm 73) as the only anglo in the barrio (I was known as the vato americano). Our local corner store produced menudo (you had to bring your own pot to carry it away), enchiladas, tamales and hard shelled tacos. I remember asking for a taco in English and abuela in the back telling her granddaughter, "Dile al gringo que ya no hay." I replied, "Orale abuela déme un taco." "Pués, habla español entonces."

helll yea mitla cafe,! that place need to be recognized as spark that stared taco bell. its crazy we grew up eating marisco jalisco, and mitla. We never knew how historic they where untill recently.

Nothing but respect for what most people consider as their gateway drug to the world's best cuisine. My first taste of Mexican food was a hard shell taco our neighbor made. Never looked back since then. Salute to Lucía Montaño whose recipe travelled oceans and links generations.

Grew up in Riverside and have ate every place several times. The best hard shell ground beef tacos anywhere are in Riverside though. Go to Tina's Mexican food on University Ave.

My grandpa, God bless him, frequently took me to Cielito Lindo for taquitos and a Coke in a glass bottle. That was about 55 years ago, and I still remember those occasions fondly. Really, there is so much spectacular Mexican food in Southern California, I don't know how you'd decide which establishment to feature.

What is a 'sacrilege' is taco bell. A lot of mexicans forget that hard shell tacos have always existed as 'tacos dorados', and as he said the food changes depending on the region. A lot of northerners have a dislike of the flavor from southern tacos, so who says you can't change the recipe as long as it tastes good.

My family ate at Mitlas every sunday from the 60s to about 93, or 94? They said something happened and it wasn't the same. Mitlas catered my grandfather's funeral a few years ago and I thought that they did a great job! Se hacen un jale bien chingasote cabrones!!! The food was soooooo gooood!!!

Hard shell or soft tortilla, I wish to eat all the tacos. The crunch when you bite into a hard shell, immediately folllowed by the multiple textures within, is a truly magical thing. This was the wrong thing to watch before dinner, which is not tacos.

@@albertledesma5173 it's common knowledge to everyone in the San Bernardino area. Glen Bell started Taco Tia as his first taco chain and sold them as a whole as he wanted to make another chain a franchise that people would buy into as owners and operators of his branding Taco Bell.

I remember the first time lining up at Tito’s being a broke musician. A friend was telling me about this place in Culver City where I lived at the time and said ‘be prepared to line up, you have to get the fried tacos, chips and salsa.....but don’t forget the bean dip’. The first experience sitting outside in the parking lot eating Tito’s was amazing. It was so cool seeing the place run like a machine. The food amazing, the experience amazing. I must have been back there 100+ times since my first day.

Tacos are different on every state in Mexico. You got flautas, hardshell tacos de papa similar to Mitlas, tacos de frijol and many more versions. Mitlas is an original taco recipe and is best and better than the bell tacos.

For those that do not know, Mitla Taco's has a connection with Taco Bell ! Glen Bell creator of Taco Bell actually worked at Milta Cafe and learned how to make the hard shell taco.

I'm a 52 year old native of Tucson, AZ and have been eating and making good Mexican my whole life. Tacos Dorados are an art form - but they should never have crappy yellow cheddar tossed on as an afterthought. Cotija on lettuce. And if you must cheddar - you out it onbthe meat FIRST so it can melt.

If you are ever in Mount Vernon, WA try the Mexico Cafe. Great crisp tacos. Make sure you put the house hot sauce on the taco.

I remember the first time I went into my local Mexican grochery, I was getting a mess of dried chillies, mole paste, dried poulantro, Mexican oregano, cinnamon and star anise. The older woman behind the counter seeing a midwestern white guy gave me a look like she was worried I was going to cook her dog... I was shocked and said slowly "they are all for differnt recipes..." She started to laugh so hard.

Let me clear this up, Most mexicans don't think the hard shell taco (taco dorado) it's a sacrilege, but more so what places like Taco Bell has done to the taco including the rest mutated "Mexican" food on their menu. Hard shell shrimp Tacos like the ones on the last part of this video, that hold a lot of the original flavors and combinations, are a great example of how hard shell taco can be a great taco and can rise above the rest. That taco could be a winner on any food fest or taco competition held in Mexico.

My mom came from Mexico she has passed now. But when frying tacos she would ask soft, medium or hard tortillas shell. She opened a Mexican restaurant in 1960. That was a thing. At least she sold her enchilada sauce recipe for $50.00 to a rep from an American food company. I was there when it happened $50.00 was big money then.

I love this guy. Ain't nothin wrong with wanting a hard shell taco here and there- they might not be what you'd think of as authentic Mexican tacos, but who cares? At this point they're an entirely different dish, and a fucking good one, too. If you like tacos, I dare you to get a really good hard shell taco and not enjoy it. It's like fans of chili complaining that Cincinnati chili isn't real chili- like, yeah, that's not the point, it's not trying to be. It's something different, created by people taking an established food and tweaking it based on what they have available.

Joe Kidd Yes!! Absolutely!! That’s my point! Tortillas have been getting fried in Mexico for centuries and this place is gonna come along and say “we invented the fried taco.” Of course all the gullible kids are gonna believe this nonsense but thank you for making my point for me.

I gotta say, most of the food in this episode looked like ass. I'm definitely down for that mariscos one though. Hard shell tacos with potato are the best. Don't knock it till you try it.
