Under the guidance of Chef Sergio Freitas, Chef Shiv Negi, Chef Nabil Bakouss, and Chef Ashwani Pathania, the student chefs brilliantly executed a variety of fine -dining dishes such as Trio of Salmon, Chicken Galantine with mushroom Duxelle with Herb Pilaf and Potato gateaux, and White Chocolate Coconut Passion Dome; which were truly a work of art but also had complexity and depth, once again showcasing ICCA as a centre that offers superb application and outcome focus in the training delivered...
