Welcome back to my channel. In this video I'm sharing with you my Cantonese style steamed fish.
The word for fish in Chinese is “yú”, which also means surplus or abundance. Superstitious or not, we always include fish in the New Year meal. It’s an expression of Thanksgiving and Hope for the new year.
This recipe is one of the tastiest, yet it's super easy to make. It’s my favorite way to cook fish. I hope you like it as much as I do.

Ingredients
One whole fish - about 1 1/2 lb (680 g)
Fresh ginger - 3 oz (85 g)
2 stalks spring onions
3 stems coriander
one red chili pepper
2 tablespoons Shaoxing wine
1 tablespoon vegetable oil (for coating the fish before steaming)
Sauce:
2 tablespoons soy sauce
2 tablespoons water
2 teaspoons sesame oil
2 teaspoons rock sugar (or 1 teaspoon regular sugar)
2 tablespoons vegetable oil (for infusing the ginger)
Cooking time: 7 minutes.

Watching you is like watching a Master Class Marie. I love how delicate you are with the food, you even rubbed the fins with the oil and flavors. I see the respect you show the meal you are about to cook, and all the love that's going in there. If someone asked me what's cooking with love, Id point them in your direction every time. Im actually really scared when I cook fish, so I appreciate that you explain what to do, and why to do it. I've probably watched 1000 videos about fish, but the way you explained how to test for doneness just clicked for me, when none of the others did. It looks so beautiful and so colorful as well. I would 100 percent eat that whole fish! Thank you girl😍😍

This fish absolutely looks appetizing. I like the ginger strips under the fish to lift it up, great idea. And I like the ginger strip and oil on top as well. Nice easy sauce. Thanks Marie for such a great lesson. The fish is so colorful.

Well done Marie. I love steamed pomfret I use to go to newton hawkers centere to enjoy seafood. My favorite was steamed pomfret and also I love the Hakka Yong Tau Foo. Maire your recipe is so delicious that I can actually savour the taste while watching you cook. I love your calmness and cleaniness. I can't get fresh pomfret in Ireland, the closest I can settle for is haddock or cod. Thanks Marie Bon Appetit.

Wow, I love whole steamed fish, it's always very pricey in restaurants. I didn't know it's a New Year's dish nor the meaning behind it, always learning something new from your videos. Your fish looks very pretty with the ginger, green onions and red chili as garnish. I like how simple the sauce is, savory and aromatic without overwhelming the fish. 😘. Yes, For the non-Buddhists, the fish is just as important to include in the new year eve meal. I agree, a similar fish like the one in the video can easily cost $35 in a restaurant. And yet, it is so simple to make. Thank you for your lovely comment. again!

I find if the ginger strips are fried first, the slight charring will make eating the ginger easier.

Hi Denise. The Chinese Zodiac has 12 animals. Ox are the hardest working ones. It is believe that People born in the Ox years are reliable, trustworthy, calm, and gentle. These are the Ox years: 1949, 1961, 1973, 1985, 1997, 2009, 2021.

u have to use the other side of the chopping board.....the grooves along the board will stop the board from moving around......they were made for that reason.....

Add fried garlic on top fish and use hot fragrant garlic oil. Fish taste more delicious fragrant. I only use ginger slices while steaming. Not a fan of putting red chilli & fresh ginger slices (unless using fried ginger slices) serving the fish. I only put cut slices parsley & green onion. Fish sauce: sufficient water, light soy sauce, smash green onion, sugar, oyster sauce or abalone sauce (only little) to give some body.
