Cantonese style whole chicken
1 whole chicken with skin
Wash the chicken and pat dry
Marinade
24bs dark soya
1 or 2 tsp 8 to 8 sauce
1tsp oyster sauce
1 tsp mustard sauce
1 tsp pepper powder
1 tsp dry red chilli flakes
1 tbs onion powder
1 tbs garlic powder
Rosemary
Honey
Mix all the ingredients
Apply butter inside the skin
Then apply marinade and refrigerate overnight or at least 7 hours
Then bring the chicken to room temperature,
Preheat the oven in 250 degree, for 10 minutes, then place the chicken , roast for 2 minutes on high temperature, then on 150 degrees for 1 hour 20 minutes
For the gravy
Add the oil and gravy collected in the plate for sautéing onions ,3 medium onion , saute until brown, then add. Celery , minced garlic ,add the roasted chicken, coat the chicken with gravy add more soya and whichever sauce you like , serve on a layer of noodles or fried rice
