I'm aware that you can CHOOSE to side with either the church or with Edelgard (if you're on the black Eagles though) and I was under the impression that If you sided with Edelgard, then your romance with the teachers (i.e. Manuela here) is then completely Null/void/impossible. can someone please confirm this for me? Is it still possible for me to romance and marry Manuela (much less recruit/keep her with me) Even if I sided Against the church?

Yes, absolutely. The only character you can recruit during a Black Eagles run that will not stay available in any and all capacity if you side against the church (playable, supportable, eligible for romance, etc) is Flayn (for reasons that are probably obvious). If you successfully recruit Manuela before the timeskip events (and I think the requirement for it is simply a minimum level for Byleth) Male Byleth can marry her in any story route, including Crimson Flower, the Edelgard campaign. Sorry if this info is too late to be useful.
