Just got my LSG offset a couple weeks back. Amazing how efficient it is, love it already. I did a picanha roast on it the other day that was one of the best cooks I have done. Used the grate to sear it off. Delicious. Love your channel @Russ. Keep it up!

We have a lot of red oak and white oak here in Northern New Jersey. I have a bunch of it that’s been sitting in my backyard and I used it on my offset and got surprisingly good results with it.

Rus I am looking to buy an offset smoker in the near future but I donk know which type or company.. Did you ever watch or hear of Alan's welding ? He is out of Louisana, I think his work is AWESOME. I have a pig roaster , upright 5 shelf pit boss smoker but it is electric can't take it on some trips in montana, If you can give me some info. ( don't go crazy ) that would be great. They are all good but I don't know , I'll pick one up sometime this summer.. Depending on shipping costs. Thank you Frank from montana.....

This was fun. So many folks would benefit from learning first how to live fire cook. Everything falls into place after that. You don't " control" fire. You influence it. Give it more fuel or reduce fuel. Reduce air, increase air. Everyone have a great day 🌤.

Russ with all the different types of smokers out here, I was wondering what would be the best one to buy for home and I do smoke at a one day flee market. currently i'm using a vertical smoky joes and 2 weber kettle grills. Thanks Charlie Also I have looked at the meadow creek PR42 but its not a offset. I live in Loris SC

I think you will get the best tasting BBQ through an offset smoker, but as you know it requires tending to the fire frequently. It's really about what you are wanting and willing to spend. If you want less tending and more convenience then a pellet smoker, or even a charcoal/wood combination type smoker like an insulated cabinet smoker may suit your needs and still deliver decent BBQ. I own a Ole Hickory that I love because it has the convenience of a pellet grill but lays a beautiful smoke on the meat using wood splits that I like even better than my offset but they are very expensive, but in the end, it's totally your decision.

Russ thanks for the info. I'm using oklahoma joes not smoky oes. I perfer to cook with charcoal as a starter and then wood. Money wise it is up to me as how much I spend and within reason. $5-$6 k but under 10 k. There are so many to choose from and i just want to get a decent smoker I can buy a lonstar Yoders meadow creek etc. I'm hoping for some advice from an experenced smoker like you. definetely an offset

I have a LSG offset, but haven’t done a long cook as yet. How do keep the temperature consistent during the longer cooks. As you start putting on splits are you supposed to keep main chamber closed or open it up to let out the white smoke as your cooking? I’m confused about that. I always hear that’s dirty smoke, also let’s out so much heat. Another thing that Is it better to adjust heat the the firebox damper or the size of the splits. I see different guys using different methods. I heard guys say use bigger splits for longer run time. Not for heat. Use damper for adjusting temperature . What’s your thoughts. Love videos, keep up the good work

Start the pit by adding in a few splits. You can start them as I did here or other methods, just get them burning. Let the wood burn into a bed of hot burning coals. When you first light your pit up it will smoke heavily until it gets hot and established. Keep a few splits on each side of the fire to get them preheated. Temperature will dictate how much wood to add in. Your climate will also affect this as well. Add another split as you need to. When your desired temperature starts to drop, it's time to look at the fire and determine if you need to add another split or simply poke the fire around to revive it. Once your fire and pit is up to temp, don't concern yourself with the smoke. It will be what you need. Only when starting a pit, when you have that thick harsh smoke. It normally takes around 45 minutes or so to get a pit under control and ready to place the meat on. My advice, is to just start using it. After several cooks on it, you will begin to understand what is needed much more than I can tell you here. Just go for it! BTW, having mild temperature swings in an offset is perfectly fine. Temps will vary as they burn and as you add in new ones, but the pit is still within range. You will see.

Thanks for watching. I usually go 1/2" from the firebox, then double the space to 1" on the next one, then I double that on the last one to 2", but it may differ from pit size to pit size, but works good on my 24x36

Nice video Russ with good tips. This is a little off subject, I've been wondering about the LSG IVS. I've seen you and others cooking with it. In the fire box using divider plates, with the snake method, does that make the front of the cooking chamber hotter than the back, and does it move as the snake burns? Also I've seen the divider plates used to make one pile of coals at the front causing the same issue. Do you think having the divider plates centered in a square something like the WSM coal ring centered would produce a more even temp. in the cooking chamber? Thanks.

The only real temperature differences you are going to notice is top to bottom, not so much side to side. I never obsess over slight temperature variations. All smokers will have that. As long as everything stays in my desired cooking range, then I'm good to go. Thanks for watching

Great video, Rus. I’ve had my 40” offset LSG for almost a year and have decided to remove the tuning plates entirely. Doing so does give you the authentic top-side heat instead of coming from under the plates. Have you tried running your pit without the plates? Doing so requires much smaller splits and more care and feeding. Just curious if you’ve tried it.

@@wcneathery3100 gonna try your setup today on my 40” LSG. With your setup of the plates by the firebox, did you get better convection or topside heat? Vs not having them in at all? Would appreciate knowing what your found better. Thank you.

@@jamesrazza2246 for whatever reason I seem to have more even heat top and bottom maybe better airflow. With the plates spread out the top heat seemed more intense rather than flowing across. Hopefully that makes sense. I always leave my exhaust stack vent wide open and my intake wide open till my temp gets where I want it then close intake down to maintain temperature. I typically cook in main chamber 250 to 275 I don't chase temps I let it ride where it wants to. A lot of my cooking temp is dependent on outside temp, humidity and wind.

I have a Masterbuilt gravity Grill/Smoker and I would put it up against any offset smoker, if whatever we were cooking, was done the same way and cooked at the same temp for the exact amount of time, the ones from the Masterbuilt would taste better, because it add the charcoal taste.

So you have any experience seasoning the offset with beef tallow or lard. Those fats are the most stable and healthiest when it comes to heat. Vegetable oils from PAM are highly inflammatory and cause oxidation when heated. Definitely don't want that in high quality BBQ. Plus animal fats taste better and have much more flavor than Vegetable oils.

Your coating the pit, not eating it. You would use animal fat the same way if that’s your choice to use. This pit was seasoned 5 years ago. Only seasoned it the one time, and it continues to season on it's own every time I use it.

That was only temporary. The wood is split there, then moved to the back of the back yard on palettes and covered

I don't know the channel, but as I said, as far as I know I was the first. Obviously I wasn't. I will say that I'm the very first KZbinr that Chris took a chance on by providing the pit for the channel. That was like pulling teeth to get him to get onboard, but he has never looked back. That's what prompted him to reach out to more creators on KZbin.
