It's not neccesary to add milk to your dough to get it to a soft texture. The butter and warm water does the trick.

Wow I was telling my wife about an amazing Easter weekend I spent in Trini in 87-88 we camped on Manzanilla beach (bath tub derby) and I always remembered we drove down to Guayaguayare by a friend's house and they made that same bake with fire on top & below it was a first for me and have not had it since man that was the most scrumptious bake I had with coconut water.

Uncle, I felt queasy watching you with that knife removing the dry coconut from the shell. Have you tried freezing the coconut (minus husk) overnight then taking it out and hitting it with a hammer (I would start at the end with the eyes)

Uncle Clyde seems like a nice guy but that bake did not come out well. it was falling apart and cracked up. mixed essence? no butter? and a set of random measurements while doing twice as much in reality. How much coconut? no one knows. yeast about 1/4 pack but he dumps half. no thanks
