Hey Becky! Just a little tip if you're making curd - the level of acidity of your lemons will affect how set your eventual curd will be. Meyer lemons are less acidic so your curd might be a bit loose if you use solely Meyer - you can play around with upping the acidity by adding more regular lemon juice (or even citric acid if you have it!). Good rule of thumb for less acidic citrus (e.g. grapefruits, oranges, Meyer lemon) is to weigh the juice and add 7% that weight in citric acid - that will give you a nice firm set for your projects

@@AcreHomestead I recently had this happen with my instapot lemon curd. I ended up putting the 3 mason jars into a hot water bath on the stove and stirred them until they thickened.

When l was little girl loved lemoncurd sandwiches so nice but love lemoncurd and strawberry jam tarts not big tarts just muffin pan size tarts make them at Christmas and Easter

I agree about the Meyer lemons they are more acidity to them and I always add another lemon to balance it, I’ve been making lemon curd for over 20 years and I got th , I received the recipe from an English lady who told me that when she first tasted my lemon curd the first time I made it it reminded her being in her grandmother‘s kitchen in London and have homemade bread so I stick with my recipe recipe from an English lady told me that it reminded her of being in her grandmother‘s kitchen in London, eating breakfast with homemade bread and lemon curd, I have also made lemon card for a baker who makes wedding cakes. I enjoy making lemon card and I do juice, my lemons and zest my lemons and freeze the zest with the juice or beside the juice and then I strain it I strain my egg yolks and I strain everything after it’s cooked and let it set with the butter and then I whip it until it is very shiny and then I put it in jars and put a piece of parchment paper on top to keep and then I vacuum seal the jars, I hope you enjoy this process. It will be so rewarding for you.

Another idea for the lemons if you have extra. I slice into thin rounds and dehydrate them. Then store them vacuum-sealed in a half gallon mason jar. They’re great to drop in water, tea, whatever. Also, if you have also extra limes, you can do the same. They make great lemon water. They’re great for tea. They’re great for whatever you wanna drop lemon slices in to make it a little more refreshing, and it does give you a little hint of lemon flavor, after it gets refreshed, they’re great!

I keep the used up lemon/lime peels and make garbage disposal cleaner pucks. I juice my lemons/limes. Make lemon/lime cubes for future use for recipes/marinades or lemon/limeade. Then I put the lemon peels into a silicone cupcake mold with white vinegar and freeze those and bag/label them and put one puck into my garbage disposal and grind up the frozen puck to keep it from smelly buildup 😊

I start by zesting the fruit, then juicing it while it is still firm enough to handle, then peel the pith from the rind and candy the rind. Finally, I can't resist sowing the seeds - they do grow, it takes around 2 - 3 years though to get a flower. It is quicker to take cuttings; which fruit much quicker.

Hi Becky, the difference between European butter and other butters is its water content. European butter has much less water, which intensifies the butter flavor. I myself love European butter. 😊

Actually it is the fat content. European butter is usually 82% fat versus American is 80%

It is indeed the fat but most European butter is now 85%. That's why it is much softer and more spreadable

In America Cabot’s premium has more fat content than the European versions and is the top butter in the world. I read it an article recently. I think it’s 88% fat.

It’s actually the fat content. They’re much richer and you can use a lot less and still get an intense flavor.

We buy about 30-40 lbs of Meyer Lemon's yearly from an organic farm in CA and we dehydrate them and add them to our teas! It would be a great add't to your Raspberry Tea!

I’m looking forward to seeing your citrus preservation video. BTW traditional orange marmalade is not made with sweet eating oranges, it’s made with bitter Seville oranges, which have a very thick skin, only available in January and February. Preserves made with sweet eating oranges is jam.

That’s what I do with my 5 lb blocks of cheese from Azure. I cut them into smaller chunks and vacuum seal them. It works great.

When you make lemonade, freeze some of it in ice cube trays. That way when they melt they won’t water down the lemonade. 😊

Lots of lemons and citrus, but I'm lucky I have plenty of trees of them in southern Italy. I use so much peels in the sauce with garlic olive oil, and often I will be shredded at the end over pasta etc .

One table spoon of pink Himalayan salt for 2 cups of filtered water in a jar and store whole lemons or Limes for a year in a jar. make sure they are all submerged, put a plate on them if you need to keep them down, and wash and rinse the lemons

​@niknaksim Himalayan salt contains minerals and iodine that is removed from normal salts. But check that the Himalayan salts is true as there is a Pink Himalayan salt on the market that is a fake.

Consider freeze drying the lemon juice and turning it into powder. I add mine to everything to add an extra zing to anything lemon without adding juice.

If you cut up your block of cheese into 1lb chunks...then pkg individually with your seal-a-meal they will keep just fine...costs less. Just a thought 😊

Hi Becky, one Easter I did not ha e money to buy a ham but I had a pork loin. I cut the pork and layered it out, filled it with stuffing, rolled it and covered it on the outside with orange marmalade. Yum. Best pork I ever ate.

we were unfortunately affected by the tornadoes in the midwest. thank mother nature for givining us minimal damage but down lines lead to inconsistant power so quick meals this week but we are eating out of our freezer once power comes back on

I love using citrus to make cordial to drink during summer. I also make homemade 'jubes' by adding the peels to sugar syrup and coating in sugar. A great lolly alternative

I get a gallon jug of maple syrup at a fair from a Maine (where I live)maple farm. Once I open it and it has to be refrigerated I put the opened jug in my extra fridge and keep a canning jar of maple syrup in our kitchen fridge. Yes, it costs less this way. Yes small containers are more convenient. Yes, the big jug gets sized down as we refill the kitchen fridge jar. I think I will switch to the smaller packages of cheese from Azure though. That’d work much easier than cutting a hunk off the big block.

I buy my cheese in large packaging and then spent the day grating all my cheese and putting in the freezer. Works out much cheaper and cheese freeze lovely when grated, and grated cheese last me longer.

Keep one of the smaller bottles of maple syrup when they are empty and then you can refill when you buy the larger bottle. Less waste ☺️❤️

keep the small bottle even after it’s empty ! then you can fill up the small bottle & keep the large one out of your kitchen fridge ! my mom has been using the same small syrup bottle (that fits nicely) for as long as i can remember

If you enjoy lemon & lime slices in your water or in cocktails you should definitely freeze-dry a good amount of that citrus. I had the pleasure of getting a small bag gifted to me & threw a slice in my ice water a few days ago & oh my gosh it was so delicious & when it rehydrated it was a fresh slice of lemon again like I'd just sliced it from the fruit but the way it flavored my water went further for some reason

The Meyer lemons are wonderful just juiced into water. I make lemon water with them, add a little sweenter and it's delicious! They also are wonderful in recipes like lemon cake and lemon blueberry muffins.

Just a suggestion….use some of the lemons in your marmalade recipe….great pectin from them. Don’t forget to water bath the lemon juice so it’s shelf stable too!

Hi Becky I've been growing our own lemons for years, when we have an abundance we freeze the juice in ice trays then when frozen we bag them up, or freeze the lemons whole double bagged to avoid damage to lemon or we make lemonade cordial (very yummy). Have fun.

Becky, some more suggestions with the citrus, one is lemon or lime marmalade, which is gorgeous. The other is preserved lemons, which is good with Middle Eastern recipes for chicken. Can’t wait to see your recipes, especially lemon curd.

I so wish that we had Azure Standard in the UK! The haul looks amazing, I love citrus and peaches more than anything and really enjoy working with them. I found an excellent recipe/ tips on making orange or lemon curd on Veena Azmanov's site, I have made both curds on a number of occasions and they are really good. I use the curd to make lemon or orange ripple ice cream, swirling the curd in when the ice cream machine has finished the process, while the ice cream is still in a stiff, whipped consistency. Leadfarmer has a lovely recipe for a lemon tart, it is a different texture to a meringue, really creamy. Citrus make a great simple mousse, I don't need to use eggs in the recipe. Perhaps one day, you will have citrus trees at the homestead, even if they have to be in a polytunnel or under glass. Thanks for showing us the produce, amazing!

@KentuckyNaNasHeart If you think about how many county residences had orangeries years ago, on the Victorian Kitchen Garden programme, the gardener described having to produce a perfect pineapple for the dining table. We have lost a lot of skills over the past decades, I have young citrus trees in the UK, but they cannot stay outside over Winter.

Hey Becky... those Meyer, lemons are really good if you like Margaritas. Add the juice of those meyer lemons to a blender of Margaritas and you'll always drink them that way. Add a little at a time. To where you get it the way you like it. You don't want your Margaritas to taste to sour so Add, taste, add taste. Enjoy

I love making my butter into shelf stable ghee. Try it. It's very easy to make and is a great way to free up freezer space. We love using ghee on freshly baked bread products as well as for cooking.

Becky, As an FYI… European style has a higher fat content. Let us know ow if you like that butter. I buy the rumino or Kerry Gold. We had a ton of citrus a couple of months ago. I zested everything, made citrus extracts, and made a bunch of pulpy juice (I just peeled after zesting then threw them in the blender, put them in small silicone cupcake pans and froze). I love the curd idea…

Becky, if you still have lemon juice, look into canning some Strawberry 🍓 Lemonade Concentrate (from Ball). You can use lime juice and substitute other fruits (blueberries are good and raspberries if you like them). Orange marmalade is delicious on hot buttered English muffins i made some grapefruit marmalade with the remainder of a surplus of grapefruit gifted to me by a friend and used a jar to glaze a ham. It was delicious 😋

I have a Meyer lemon tree and the lemons are sweet enough for me to eat like orangers. My gardeners eat them when they get hot and thirsty. My suggestion is if you use them, for curd, reduce the sugar. I cook with them, but my favourite thing to do with them is make hot lemon drinks or lemonade.

Hi Becky, I just went to a markets this weekend and they sold freeze dried lemons and limes and you can put the slices in water or your cup of tea. I tried one in my tea without milk it was delicious. She also sold apple slices with cinnamon on them to snack yummm.

I buy my maple syrup in half gallon size. It goes directly into the freezer. When I need it in my fridge, I put it in a smaller container.

Becky- I just made orange marmalade for the first time and it is awesome! You can definitely taste the freshness. Compared to jamming berries, it was a lot more work, but next time I will use a vege peeler that makes strips of rind.

Make lemon curd out of those also and then sliced the rinds and make candied lemon rind. I did that today and it’s delicious.

Seville oranges are the best for marmalade because of their bitterness. If you you ever see some, try making your marmalade with them .

Freeze dry the rinds that is not going into marmelade and make power from it. Put it into cakes or cookie for taste or roll chocolat truffels i it...white chocolat filled with lemoncurd, rolled in lemon powder...dark chocolat truffels with raspberry filling rolled lime powder...

Becky, meyer lemons are less acidic and do not last as long as regular lemons. Eventhough I'm not a huge canner, I do can jams, jellies, preserves, conserves, and marmalades. I prefer the peels in marmalade to have that citrus bite. If that's what you're looking for seville oranges or bitter oranges I find work best. (For some reason I kept typing "beast" for best, four times in a row!) lol Have a wonderful week. Much love and many prayers. 💖💖

This has me thinking that I need to make some Moroccan preserved lemons. You can use the rind in a lot of recipes, but my favourite is lemon olive chicken; it’s the best gravy I’ve ever tasted!

As long as you have pure maple syrup, there's no need to store it in the fridge. It's like honey in that it doesn't spoil unless it's contaminated or adulterated. That's why Canada is able to store hundreds of thousands of gallons in the strategic mapale syrup reserve.

Speaking of the strategic maple syrup reserve, it's running dangerously low at the moment. If you consider it a necessity in your pantry, you might want to stock up before prices skyrocket.

for all citruses you can soak in simple syrup freeze dry and theyre so yummy and can be used in cake decorations, dipped in chocolate

If you find it cheaper to buy large bottle of maple syrup you can store the big bottle in the other fridge and fill and oil bottle with maple syrup and put in main fridge. I have kids and they would dump syrup out so I started doing that because it comes out slower and it fits better in the fridge.

Could you freeze dry the pulp after you zest and juice everything? Not the pith, just the pulp leftover? Seems like it would work to flavor drinks and dishes that call for lemon, lime or orange

Usually maple syrup doesn't need to be refrigerated, so you might be able to save some more room in your fridge, also, definitely use the Meyer lemons for curd and just juice the plain ones. Meyer lemons make an amazing curd

4:14 The butter discussion got me thinking about shortbread. Then “I wonder if there’s such a thing as browned butter shortbread?”. And now I need to pause the video and go google, because that sounds amazing. ETA: Brown Butter Shortbread is totally a thing, and it sounds AMAZING!! (Lol. ADHD at its finest. 🤷🏻‍♀️ =)

Still on the topic of butter - my favorite for when I want to taste the butter like on toast is Trader Joe’s cultured salted butter from France (blue & yellow wrapper). It’s so good.
