With beef ribs, you keep the membrane on, so the ribs remain intact. With pork ribs, you remove the membrane, so the seasoning can penetrate. The pork ribs won't fall apart. Cheers, Quang! 👍👍✌️🇨🇦

Great job Quang!!! Those ribs looked great and they looked like they had good texture! With a few tweaks like spraying the OJ or a mixture of liquid while smoking (just watch the sugar) and adding the bbq sauce at the end might give a better product. Also how you wrap could make the difference. At the end of the day it’s what you like but just wanted to offer a few tips. I have a Weber Summit and I love to smoke on it. Again Great job❤

If you want to use the orange juice to keep the moisture, buy a spray bottle and spritz the ribs as they’re smoking. It keeps the moisture and infuses the orange flavor into the ribs.

Looks good bro. Next time you can just score the silver skin if you don't want to pull it off. That way your seasoning can penetrate the other side. For spare ribs just use the 3-2-1 method to smoke. Makes them waaaaay more tender. You dont need parchment paper either, foil alone is perfect.

110 feels like it's on the low side. I'd recommend wrapping the meat in foil with butter and liquid smoke, then tossing it in at about 130 for a few hours, or until a toothpick goes through the meat with no resistance. But really it depends on the size of the meat itself and the grill you use, as well as what you actually want. Me personally, I prefer meat that falls off the bone. One of the first things you should do is get to know your grill. Every inch of it, from the weak spots where the heat radiates out the metal the most all the way down to the air gaps, and even where the heat is the most focused on the inside. Know your grill. Smoking and grilling is a sensuous artform and the more passion you put into it, the better your meat comes out. Giggity.

Suggestion: pull the ribs after 3 hours. Wrap in foil, but add some butter and brown sugar. Smoke for another 2 hours wrapped. Then, uwrap ribs, add sauce (or not), and go for another hour ( or until 200 degrees Fahrenheit. Ypu might have to bump up temp to abt 250 Fahrenheit if you want "some" bark. If you don't like the bark, no use in trying TX ribs...cuz the bark is what they use as a guide. Good luck!
