Hello! Welcome to our learning to cook pizza journey. I am joined by Chef Marco from Delivita who shows us how to use the Delivita Wood Fired Oven. It's my first-time cook using the Delivita Oven and also the first time I've used a clay wood-fired oven! We cook 2 pizza's in real-time. Marco cooks first to show us how and then my first cook is at 8:06 minutes! It was pouring with rain but we were protected under my pop-up gazebo!
The dough was from Delivita.
This was a fantastic learning opportunity and I'm very grateful to Chef Marco for the time he took to teach me how to use the oven and also how to stretch pizza!

I love that the rep from the company came and showed you their way of doing it. I wish more companies would do that . Even the distributing companies should be trained so the manufacturer rep doesn't have to come out.

It's been a while since I've visited your channel... I switched from making pizza to wine... And you look to be doing very well! Congrats! On edit - I think I'm going to need to make some dough and breakout my Koda this weekend. A Margarita pizza might go with a glass of Pinot Grigio I just bottled.

Surely the “keeper” of pizza ovens. That’s a pretty nice one. I built a few wood fire oven but they were huge. It took 2 to 3 hours to come up to temp as our dome was tall but wow it cook cook anything and everything and went through a lot of wood. I really like that the look of yours. I spent $2000 plus on a laundry list to build my ovens from Vermiculite, refractory bricks, thermal blanket 1500 degrees, chimney, cinder block, rebar, cement/concrete, paints, stucco, etc and broken back getting a lot of rock and stone from nearby mountain area. Lol. The dome was the hardest thing to do

.... and I guess you have thought long and hard about having your own brick built wood fired oven Pompeii style... a bit of a long term addition, maybe one to save for the next home :) I have oven envy when I see the 'woodfiredovenchef' videos.... a terrace, pool and weather always helps of course

I used to but now, particularly after using the DeliVita I don’t think I’d ever need a brick built one. But I’d like the weather, terrace and Id settle for a jacuzzi over the pool!!

Which also means the oven floor has greater thermal mass and less thermal conductivity than, say, a thinner cordierite stone. I'm guessing that's why only a gentle fire is needed once the oven reaches temperature and why the undercarriage turned out so well.

Lol! I feel a bit more confident now as Marco showed us that the process is simple - turn and stretch, turn and stretch, it's just that his dough stretched better than mine - it was very noticeable. Mine tends to bounce back so I need to adjust something with my proof or even try the Red Caputo for a 72 hour room proof and see if that makes it more stretchy but I'm worried about losing the leoparding then....hmm!

Got2EatPizza Stick with blue caputo try this recipe I use , 4 x 250g dough balls recipe using Instant dry yeast 604g blue caputo 381g water (63% hydration recipe) 15g salt 3.29g instant dry yeast Leave for 5 hours covered with cling film at room temp (20 degrees) After 5 hours divide into 4 dough balls (should weigh approx 250g each) place in bowl or tray covered with cling film and put in fridge (2 degrees) for 41 hours take out 3 hours before cook If you have different room temp or fridge temp let me know as the recipe measurements will need adjusting or you can download PizzApp app and you can save your recipes in there and adjust them The above recipe I have adjusted many times and that’s my favourite one , I also have a recipe for active dry yeast to which is all the same apart from below 2.11g active dry yeast Leave at room temp for 9 hours and in fridge for 37 hours

Thanks so much! I didn’t realise that there was a difference between instant and active dry yeast....I use easy-bake and on the tin it doesn’t say which one??!

Got2EatPizza yeah me too I only found out about 2 years ago wish I knew many years ago where I kept trying and failing. The app helped a lot. Yeah that easy bake is Allison’s yeast , we use too it’s basically instant dried yeast , however the active dried yeast you need to activate it 1 part boiling water 2 parts cold add a pinch of sugar and add your yeast and leave for 15 mins until it’s covered with froth , big mistake I made once I did this and it didn’t have froth but went ahead with it and pizza were like flat pancakes t he n later found out the yeast was expired and I didn’t store it in the fridge once opened 🤦🏽‍♂️ P.s I have tried making both instant and active side by side and the dough is pretty much the same however the active is just slight better I think it’s down to leaving it out longer before putting it in the fridge. Like an idiot Once I tried to be clever and left the instant yeast (easy bake) one out the same time as the active and it was a fail because the instant went past its maximum proofing time and started to self collapses and learnt somthing new that when you see the early stages of it collapsing the yeast is dying and your going to need to use it quick or else it’s another hard crust pancake pizza for lunch 😂

Delivita is almost $1600 US plus whatever the cost of shipping is🤦🏽‍♂️! I bought my Roccbox for $370 US & it shipped for free from a wood stove store that had it set up in their store as a demo model. I believe the Roccbox to be built as well or better than Delivita & don’t see the justification of its high cost 5 times higher in my case🤷🏾‍♂️

F L I was blessed to come across such a deal! The store had it listed for around $500 but I offered them $370 & to my surprise they accepted. So, I bought it bc you don’t find deals like that often & I have wanted a pizza oven for years but felt they were too expensive.

It's nice. I wasn't sold on the fact that it did not have a chimney and you have to add wood from the front, but after watching I think it's a really nice looking oven for a permanent spot in a backyard. Curious about weatherproof properties of the oven.....

It really is so lovely and the outer shiny shell is to protect the clay inside. It's made from fibre glass and if I'd got caught outside in the rain during the cook the oven would have been just fine!

Looks very cool but it’s SO expensive. You could get a subito cotto from zio Ciro for about half as much and it’s gas. Or you could get a 60 cm oven For a little bit more from zio Ciro. Assuming they ship to the UK, I’m in Sicily.

It does cost more - there are a few different variables with this oven..Made in UK, handmade, it’s a clay oven with a protective fibreglass cover, a clay oven that can be placed on plastic and portable, looks beautiful. 🍕👍

Hi, if your base burns it could mean your stone is too hot at the back by the flame - what temp is it when you cook on the stone?

It should be 430c in the middle of the stone and with turning, all parts of base should get cooked without burning so not sure why your base is burning..are you using sugar and oil in your dough?

Have you recognize any difference between wood-fired and gas pizza? I think gas oven pizza looks more whte than brown as wood fired oven.

Hi! There is a flame difference - the wood flame is different to the gas and it can get a lot,hotter in a wood oven. 👍

Hi! I’d want one that cooks with both gas and wood perfectly that’s why I originally bought the Ooni 3. But I prefer the burner on the Koda and the Ardore to the 3 but that doesn’t do wood. And I love this DeliVita and the Pro for wood! The Pro does both but I’ve never used it with gas so that could be it! The Roccbox does both so......I love the flame of the gas on the Rocc but the only thing is that the wood burner is small and I use the gas to heat up the stone but I love the flame from the wood. . so that could be it. But at the moment my perfect ‘if I could only have one oven’ has not yet been created! Although I’m awaiting delivery of the Koda 16 and the Karu so let’s see! If they’d put the Koda burner on the Karu I think that would have been a game-changer for me but I’ve yet to try it with the 3 burner!

@@Got2EatPizza no worries! lol I’m seeking to utilize a standard chiminea as a pizza oven. The key will be a clay ‘dome’ that prevents the heat from going straight up, but instead captures and radiates that heat downward while allowing smoke to vent out.

Hi - you’ve got to brush the ash off the stone before the cook or in-between if needs be.

It’s a nice oven but very expensive for its size. It’s not large enough to cook more than one at a time or a big pizza really... I’ve seen bigger ovens for this sort of price. Would say 700-850 is the price for this oven not 1200 nearly

I think that it’s been priced at that level - as it’s handmade in UK with clay and fibreglass surround - I think the manufacture process is more to create that beautiful build quality!

This is even expensiver than the ooni pro and roccbox, the only way I buy it is if it comes with a permanent hot Italian guy.

The dough was really tasty and much thinner than mine! It stretched easily and the pizza base cook - I've only ever managed to get that lovely base cook twice before. Once with the Ardore and the other with the Koda.

Son't think stainless steel is a good material for a pizza oven (esp. wood fired) TBH. My Ooni pro has corrosion (rust) inside and notice this one has too around the opening, probably from acidic gases produced in burning of the wood. This oven might look good when new but not sure it will age well - apart from the steel corroding, the fibreglass will probably lose it's shine and possibly fade. Brick or stone is a much better material, will age naturally and also easily repairable. The downside of course is that it's heavy!

Hi - unfortunately I don’t have this oven on loan any more! My Pro is doing good so far, haven’t noticed any rust issues on it. I’m going to give it a good clean with the pink stuff soon to bring it back sparkly.

Beautiful oven but because of its price tag those are and will be the most expensive pizzas you will ever make and cook yourself at home the Ooni at 1/4 the price does as good and you don’t have to feel you need to use it everyday of the year because of the price !Like I said it’s a beautiful oven but only a select few of people can afford to spend that kind of money on a portable pizza oven.

Good looking little oven. But totally overpriced. Also if you have to pull the pizza out for turning then you should have a better tool. The small disk pizza paddle.

@@Got2EatPizza Have you had pizza at Jamie Oliver ? I am from Mumbai India and I went to his pizza restaurant last week . Since it was my first time at the restaurant I decided to play it safe and ordered a bbq chicken pizza . I was expecting it to have tomato sauce as the base with bbq sauce drizzled on top . Surprisingly it had sweet bbq sauce as the base sauce and no tomato sauce at all . This made the pizza way to sweet . The crust was descent so I'm thinking of trying some other pizza at the same place next week . The restaurant was completely empty though , that too on a Saturday afternoon so I don't think they are doing too well .

I haven't and the Jamie Oliver restaurants have unfortunately closed down in most (if not all?) towns in the UK. I'm not a big fan of too much sweet sauce on pizza but I like it drizzled into the cheese and toppings! Hi to Mumbai!

Ummmm great video on an oven you don’t want to buy - Folks you see it right here, please don’t waste your money on this and call it a pizza oven...

😀👍! I think this is the only clay wood oven I’ve ever cooked with - the others I’ve used are metal.

Gotcha, love it. And yes I went through the same disappointment but the silver lining was I learned and now have a great set up with my Terraforno Bolla 36 all refractory cement/mortar- such a difference! Thx

No it's OK for small uk properties. And if you get a pizza done in 90 seconds then you can feed a dozen people in 15 minutes

@@peetsnort ya, I can see the way he is maneuvering. For an extra few hundred a bit bigger is better. UK backyards aren't the sizr of phone booths.

@@peetsnort Preparing and afterwards backing would take some more time is my experience. You can speed up with a separate prepares and backer, but i would love to hear how you speed up.
