I remember when the MSG scare came out in the 80's. I regularly ate at Chinese restaurants and loved the cuisine since I was a kid in the 70's. However, once a became an adult, I did notice one side effect - whenever I had Chinese food with alchohol, I would get bad headaches. So I stopped having beer with Chinese food and never had another headache when eating Chinese food.

@@theunbearables I spent 4 years of my childhood in Tokyo (68-72) and Ajinomoto was everywhere. My Mom kept a bottle in the kitchen as well. It wasn't until the 80's MSG scare that I found out that Ajinomoto = MSG. It wasn't just in Asian foods as lots of restaurants of various cuisines used it. It's just that the Chinese restaurants used it in every dish. In the late 80's my older sister took me to an authentic Chinese restaurant in Manhattan, which was staffed by chefs from mainland China, that I realized that American Chinese food is not real Chinese food. American Chinese is very heavy in oils which was very expensive in China - real Chinese food doesn't use as much - they invented the Wok which allows cooking using not just less fuel, but also less oil. This is also the time when oils and fats, and especially saturated fats, became public enemy nbr 1 for the health conscious. Personally I think its the heavy use of oils and fats, which generally aren't used that much in authentic Asian foods, that made a lot of Asian foods considered as unhealthy - the use of MSG was just one part of it but because of the MSG scare, the use of MSG was blamed for why Chinese food was unhealthy even though it was the use of all those saturated fats.

Some could be misled by original accidental process of making MSG. The boiling down method produces MSG in its form closer to its nature, no harsh chemicals used in producing it. It is my understanding that MSG can be produced at cheaper cost by fermentation, alkaline cookin,; the S part or Sodium may come from NaOH or sodium hydroxide which is a harsh chemical. This process can turn out MSG in a form so high in concentration. One teasoon of this can cause unpleasant symptoms to many. And one teaspoon of this possibly pure, MSG can be found in popular stir-fry dishes. MSG in its natural form sounds safe for daily diet. The chemically derived form sounds scary, don't you think?

I'm a Chinese ethnic who avoid Chinese restaurants that uses msg. Food is so much better with natural flavouring. My company's canteen uses msg in their food, I've been avoiding eating in the canteen as much as I could. I get strange body odour each time I ate something savoury from their kitchen. I notice same body odour from my colleague (she gets her free meals from canteen everyday). I'm not sure why anybody would want to defend msg. Even Chinese knows it is bad.

MSG is considered safe if taken in safe amounts. Such as a 100 kg person daily msg consumption should be 3 grams. MSG is safe for people without allergic reaction towards MSG. MSG is considered bad for high blood pressure, as it contains 12% sodium which is also high as compared to table salt with 42%. Japanese people are healthy and has higher life expectancies because of their organic diets, and no additives. Which we indians dont have.... MSG is safe if taken in controlled amount for people without any allergic conditions towards it.

Asian Restaurant always had MSG in it. When you ask for No MSG or they advertise No MSG it mean "No added MSG". MSG are in the sauces they use, Oyster sauce, bean paste...it's part of the fermenting process. It's also found naturally in meat, eggs, cheese and tomatoes in form of glutamate. There is no chemical difference between glutamate found naturally in foods and MSG. People thirsty because of the high salt content. Same affect after eating McDonalds and HJ chips and fish and chips...

On the neutral side, when consumed for dinner, I stay awake during night, just like I do when I have coffee. It is basically like peanut allergy, people have different levels of sensitivity for it. But it would be great if restaurants mentioned that if their recipes contains MSG, so that people like me can avoid it for dinner, if necessary.
