สวัสดีครับ
ผมขอนำเสนอสูตรอาหารฝรั่งเศสที่ผมได้เรียนรู้จากร้านอาหารร้านนึง
ได้แก่ เบอร์บองโฟม ซึ่งทำมาจากสต๊อกของปลา เนย ไวน์ และสมุนไพรต่างๆ
ใช้สำหรับทานคู่กับอาหารจานปลาหรือ อาหารทะเลก็ได้ครับ
Ingredient
1.Fish stock
2.Shallot,Garlic,Celery,Leek,Fennel
3.Parsley stalk,Thyme
4.White wine,White wine vinegar
5.Unsalted butter
6.Salt
7.Sucro or Lecithin
Solution
1.Pan on, put Shallot,Garlic stir untill it solf.
2.Put Celery,Leek,Fennel stir untill caramelize.
3.Add White wine,White wine vinegar and reduce.
4.Add fish stock and simmer for 3 minute.
5.Put Thyme,Parsley stlalk for infuse 5 minute.
6.Stain.
7.Put butter wisk untill about liquid not toomuch liquid.
8.Boiling again for add Sucro or Lecithin (1g per 100ml) and Blend together.
9.Blend on top a foam.
