Kalakukko is a traditional Finnish food from the Savonia region. An actual kalakukko looks like a high, oblong loaf of rye bread. According to some Finnish sources there are three possible explanations for the "cock" (kukko) part of the name. Translating "kukko" (which also means rooster in Finnish) as "cock" is just the humorous nature of Varusteleka. 1. In some old Eastern Finnish dialects "kukko" meant a baked thing with a dough crust. 2. Also in some Eastern Finnish dialects the words "kukku" and "kukko" mean/meant a kind of hill shape, so the name could be referring to the shape of kalakukko. 3. The name comes from the essence of the food, fish hidden inside a pocket or a wallet, for which the Finnish word is "kukkaro". Kalakukko was a really popular dish in Savonia back in the days when men worked long days in the forests away from home. The rye crust protects the fish filling and an unopened kalakukko stays edible for many days without having to store it in cold. Traditional kalakukko has either vendace or European perch as filling, depending on which part of Savonia you're at. Those are often called "muikkukukko" and "ahvenkukko". Nowadays kalakukko is more like a delicacy instead of a staple of nutrition. Modern versions especially somewhere else than Savonia may use salmon or some other fish instead. Kalakukko is at its best when eaten with some butter. Varusteleka also sells a similar product called kinkkukukko (ham cock) which is just Varusteleka's own idea, not based on a traditional Finnish food at all.
