Heading out on a camp trip soon or have a fire pit in your backyard? Here’s a recipe for some delicious fish tacos that will satisfy friends or family (or the crew).

Ingredients Campfire tacos
- 1 fillet of a firm flesh white fish, skin on
- 1 lime
- 1 orange
- Bunch rosemary
- Bunch oregano
- 1/4 head cabbage, sliced fine
- Pico de Gallo (recipe below)
- Lime crema (recipe below)
- White corn tacos
- Olive oil
- Salt to taste
- Any season you wish to add to the fish (i used dukkah but you can use pretty much whatever your heart desires or whatever you have in the pantry)
Method
1. On a piece of untreated wood, lay down the citrus slices and herbs.
2. Nail the fish skin side down on top of the herbs and citrus (make sure you use stainless steel nails)
3. Drizzle the flesh side with olive oil, salt and whatever seasoning you choose.
4. Grill the fish over an open fire until it is cooked (very hard to give you a time, you need to use your intuition for this one - mine took roughly 30 minutes)
5. Serve with the toasted tacos, red cabbage, Pico de Gallo and crema
6. Enjoy!
Ingredients Pico de Gallo
- 3 tomatoes, diced
- 1 white onion, diced
- 1 green chilli, finely diced
- Juice of 2 limes
- 1 bunch of coriander, finely cut
- 2 tbsp olive oil
- Salt to taste
Method
1. Prep all the veg, place in a bowl and season with the lime juice, salt and olive oil - simple!
Ingredients Lime crema
- 200ml sour cream
- 100ml mayonnaise
- Zest of 3 limes
- 1 clove minced garlic
- Juice of 1 lime
- Salt to taste
Method
1. Mix everything together and ya done!

grilled fish on open fire is bomb, never thought to use it for tacos also this can probably be done with them fish basket grillers you can get at bunnings for 9 bux, the wooden board gets mad style points tho lol.

I just learned something new from this video! (Love all your videos by the way) where im from Coriander is usually referred to as “cilantro”, and the coriander is usually referred to as the seeds. I had to look it up when you said coriander and i learned something new! Thank you

First time i have seen this was on a christmas markt in Germany and now is my favoriete way to cook fish.. We even experimented with sooking the boards in a water and peaty whiskey mixture...laphroaig.... We got the best results if you do the board and fish in foil...🥃🐟

I find the seeds and jell in tomatoes to be a little bit bitter. I remove them and keep the meat and flesh. When I salt the tomatoes, you can use more salt and not flood the pico with excess water, and that way any water released is more flavourful and is sweeter.

I also put red onions in water, after dicing, add some salt and coconut vinegar (or any type that is mild and nice). Wait 5 mins, drain and spin to remove any water. Find they are pretty much perfect, no off putting smell nor taste of old raw onion. Next day it is still excellent. All the veg marinate in that lime, salt and tomato water.

Yum, looks good. I think I will try it with the oz Braai & some foil on the herb citrus side. Beautiful spot, a pity it was a million degrees & not the best camping experience. Hope to see you try camping again. (Saw your video today about this trip)

There is no sacrilege. It's creative to add stuff that dont necessarily belong per the recipe but could work based on properties. I like fusing styles like Asian and Italian for example. If you like it and it's good, who cares what anyone says?
