Never had it with chilli oil before, next time. I live in Japan and just a FYI, the fresher the fish the better sashimi is actually a bit of a myth, it is true with some fish but not most. Over here most people bleed the fish as you said, Then age the fish for a day and up to four. I usually eat my fish sashimi from a day up to three day. But cut the gills out make sure there is not guts whatever,pat dry, wrap in paper into a plastic bag put in the fridge eat when ready.

This is one of the videos i most enjoyed of yours. At firs, I was a bit disappointed for the bream and the scale going around but, the result is amazing. I'm not sure, honestly, if I'd try the squid, but the rest of it, I'd fight for a byte hahahahah Amazing video Scotty, I really wish one day we can meet in person, and have a session together, in that beautiful spot.

Great video loved it. This guy with the knife knows how to fillet a fish Scotty and his knife is wrong but sharp. Not like the black jew fillets eh. Lessons The bay is amazing and full of surprises. Good chefs can make anything fresh great. Looking forward to going to their restaurant
