If you end up making trout cake sandwiches later, remember it's really easy to go overboard with the onion's in the trout cake mix. Remove the string's from the celery stalks and that will improve the taste also. I always get rid of the string's even if I'm making a stew or roast.

Our trout opens april first here in w.n.y. rainbow,Lakers,steel head,browns,splake ect. No comparison to those stock truck guppy minnows. Limit 5 per day,2 over 12" allowed. My last brown was 39". Most of us take 3,1 over 12" which is the limit on certain water ways in the same local area & state wide 1 over 12" is always a legal limit. At 24 - 40" 1 is all you need. Lake Ontario & tributaries. The larger trout lay the most eggs & are most experienced at surviving so that insures a strong future population. Myself I try to practice catch & release until I get 2 atleast 18" & no more than 24" & throw everything else back that's larger or smaller than that. I also only target them 3 times or so each season which is april 1st - October 15, after Oct 15th its catch & release only by law until the next april 1st. I have a freezer so I make them last & make it work. I've been watching them stock & promote a good population with a lot of difficulty since I was a child of 9 yrs or so around 1974. So I sure dont want to hoard or do anything to damage those efforts. I have seen natural fisheries in this local area destroyed by people keeping too much & the wrong sizes in combination with the over population of even out native carp that combined have turned miles of #A1 northern pike & bass waters into muddy carp holes striped of green growth that you could be hard pressed to catch 1 good bass all day in miles of fishing when it was every other cast without moving a foot. No kidding. So if I want a lot of fish for eating,trapping baits ,cat food ect, I target the carp & others (suckers) that move in & finish off what poor angling habits has started. Those carp taste fantastic if you know how to cook. Almost all carp are similar in flavor to Tilapia in my opinion. Trouble is most people can not catch them except occasionally by accident & usually not very big ones which lay millions of eggs to compete with the game fish young. Carp are not very aggressive,they starve out the young game fish in early stages & lower the green growth & oxygen levels of the water ways which doesnt seem to matter to carp but hits other fish harder. I'm almost professional at taking carp by rod & reel only & light gear. There is serious technique & understanding of carp behavior & feeding habits to be successful at it. Do one little thing wrong or different & you wont get a bite or successfully land them at all. Last time out I got some pike & bass as always. But I targeted the carp hard & left with about 300lbs of them in the trunk (that can be only 8 fish) but this time about 20. No kidding. If you want to know how to do this, make contact with me & ask. Absolutely anyone can do this. But follow my instruction perfectly. Oh,BTW, that was 300lbs in 4 hrs or less. It was a great trapping season 1999?

Always been a huge fan of trout with the progresso Italian bread crumbs, and then stuff it with the lemons slice. And home made tartar sauce is straight fire as it is, cant go wrong with that

I'm from NC, but if you want a better catch, either use a trout magnet or minnows especially when they are stocked. If anyone else reads this it may differ per state but a trout magnet cannot go wrong, especially if you get the big box at academy or the smaller box at Walmart. I recommend the gold color first, then silver and then whatever works for you. My tip since I'm Asian
