We are eat up with Gar here on Kentucky Lake. Used to bowfish for them back before bowfishing was cool. 😅 Never tried to eat them but some old-timers said they were good . Never been hungry enough to try it...yet.

Late to the game here but here is the most common recipe 1 pound garfish fillets, finely chopped 1 cup cornmeal 1/2 cup all-purpose flour 1/4 cup finely chopped onion 2 cloves garlic, minced 1/4 cup chopped green onions 1 egg, beaten 1/2 cup milk 1 teaspoon Cajun seasoning (adjust to taste) Salt and black pepper to taste Your favorite deep fry oil. Mix all the ingredients in a large mixing bowl and make it into a ball that isn’t sticking to you, if the batter is too wet add a touch of flour. Roll the dough into a ball and deep fry them like a hush puppy about golfball size drop gently with a spoon into the 400 degree oil for about 4-5 minute depending on how brow you want then. Dip in your favorite dipping sauce and smile ear to ear when you take a bite!! 🎉

Also for larger fish over 5 lbs your going to want to run the fillets through a food processor or meat grinder to get the sinew out of the loin. Just a few pulses on the food processor and if you have a little hand grinder or table top grinder you can run it through a course plate one time and it will keep the meat textured just like the pulsing in the processor, that way the meat isn’t smooshy.

We had a guy show up at a dam while we were fishing and he was sight fishing with a bow. That was pretty awesome. He gave us one and said how to fix it but we didn’t care for it. I’m sure it’s good when done right.

Couple facts about garfish, the scales are the same make up as rhino horns. Frayed nylon rope with the other end tied to your line with that end melted and mashed a little so the line don’t slip off holds them better than any hook when it tangles in their teeth. They are very good to eat if prepared correctly. The only reason they die outta water is they dry out. You see them come up and gulp air all the time

I've never eaten one. I've caught a bunch, but never eaten one. I've watch a bunch of videos on how to clean a gar .. from using tin-snips to banging it against a tree. Looks like a lot of work, but I hear it's a buttery, sweet, very good meat. Like lobster I understand .. and supposedly has two nice long loin type straps along the body. Maybe this summer I'll give it ago ..
