You did well. Personally, I prefer the one with fish (spicily stuffed fish), not with meat. However, it should be more spicier than what I've seen unless you are absolutely scared of pepper. Also, I was expecting to see other traditional Senegambian vegetables that should traditionally accompany it if served with fish e.g. okra, bitter tomato, cabbage, pumpkin, etc. The egg and ringed vegetables you used to garnish is not ultra-traditional Senegambian. Our ancestors did not do that. That is a modern twist invented by the Senegalese. If you want to see Senegambian food being moved forward to the next century, then yes, Senegalese are extremely good with that. However, if you want to see pure, traditional, undiluted Senegambian food, then the Gambians are the one who've preserved the tradition. When it comes to Senegambian food, Gambians are more traditional. Of course there are exceptions. I love the dahar (tamarind) spicy mix. Looks delicious.
