So I am a Canadian who married a Gambian. I have been on KZbin trying to find recipes from Gambia to make and I must say I enjoyed making everything I've found. Chicken yassa, fish yassa, his fave domoda, cowfoot soup and now I wanna make benechin. White and red. But I wanna know if I can use scented Jasmine Rice or any special kind of rice?

Well I made it and I must say... It was a fail 😔😔😔. I spent almost 5 hrs in the kitchen prepping and doing everything (I think) as you did and it was not good. It was the first dish I tried that was not good. And the rice.. Ugh...My husband being my husband ate it and didn't even complain. I felt so bad. I am not saying I won't try again but not anytime soon.

Good to know that there’s white jolof rice without tomato because that’s the one I usually eat from my female Senegal friend.But she is unable to explain the ingredients properly to me due to language barrier. Again I don’t see things like cassava,carrot, okra,etc when she gives it to me. So must I use these above mentioned items when preparing the white Benie chin or white Jolof rice. Please I really know how to prepare the white Jolof rice.

Also depending on the rice you use, some don't require much water. You just have to know the type of rice you using. A great tip for cooking a perfect rice is make sure when you add water in the pot, place a spoon in the pot upright and see if it will stand. If it falls the you put too much water. I guess is an old trick. Lol!

I made benachin once and it turned out pretty good. I'm not great at following recipes so I pretty much just did what I saw my fiancé's aunt do but I'd like to try it in one pot instead of cooking the rice separate which I did. So I'd need to know how much rice and how much water so its not mushy or undercooked.

Well mind you you have to first know your rice if takes a lot of water or not. Secondly how much people you are cooking for. I will say one cup rice 2 cups of water. You also have to cook you vegetables and that needs water too. You also just eyeball everything. If you use two cups of water to cook your vegetables I will say use 4 cups of rice 6 cups of water because you already added the 2 cups for your vegetables included. I hope this helps.
