Fit Men Cook great video. Would you consider doing an expanded video on plantains? I've been following a keto friendly diet and have found myself transitioning to low carb mixed with intermittent fasting for a bit more carbs. I have found that it works for me since I only have one or two meals a day with no snacks. I'm of Caribbean decent though I was able to give up grains, I really miss plantains and some root veggies due to their high card content. I wanted to know how much would they affect my insulin levels. Thanks

Tip: West Indians cook overripe plantain (which we pronounced plant-in), which is sweet and needs no sweetener. The plaintain is ready to cook when the skin is completely black.

A sweet plantain is ready to cook when it is yellow, there is no need to wait for it to be completely black to enjoy. My preferred way of having them is when a few black spots appear, enough sweetness without getting too mushy. He just adds sweeteners because that is his preference, also that is a very common way of cooking them in Latin America. It is not because the plantain wasn't ripe enough to be enjoyed without sweeteners. I am Puerto Rican, a huge amount of traditional dishes in my country are made with plantain and we know how to treat plantain in all stages. This tip is misleading. :S

I usually eat plantain for lunch after my workouts it's delicious when is ripe like the one in your video I usually peel it and bake it then I open it in two and put some mozzarella cheese inside so yummy I don't fry it because is healthier just bake it but I've never tried fry it with coconut oil, thanks for the idea.

My oldest daughter is a vegetarian and she makes cauliflower in a hot wing sauce that she make.. omg it is so good.. another way I like it is roasting it in the oven with olive oil, salt, and a little brown sugar...😋😋😋🤗 Love Love your videos!!! Thank you so much.. I've learned a lot from you...

I love quinoa but I only like red quinoa. I find that it's less mushy than the white. I love to make it with half water half chicken broth, onions & garlic. If I feel fancy I throw shrimp in it to pretend it's fried rice.

Whole wheat pasta alfredo with broccoli. Takes minutes to make in the same pot. Also like making yellow rice and veggies, easy the rice cooker. You've given me an idea with those plantains to try with sweet potato, it would take longer to cook but it would be a nice complement to a spicy chicken.

that quinoa looks so goood and packed with protein, a must if you're vegan ^_^ btw one trick to make the plantains with less calories is to simply boil them or put the in the microwave with a little water... they are very common in my country's gastronomy.

Kevin, thanks for including a low-carb / keto friendly recipe. I'm trying to wrap my head around doing keto in order to lose some weight and it's not easy when I'm not a big meat eater to begin with. Do you think the green bean recipe could also work with brussels sprouts (I love green beans, but just for the sake of variety)?

actually, Brussels sprouts would work as well. they are similar in caloric content. just be careful with those two since they are a bit "higher" in carbohydrates. if you're looking to feel full, id say you can maybe supplement the brussels or green beans with braised kale or wilted spinach.
