My husband is a civil engineer turned farmer, was into active business supplying civil engineering solutions for problems in roads and bridges. During Covid he realised and may be a calling to grow pure and chemical free wheat. He obtained chawal kathi wheat ( ancient produce) seeds from Akash Chaurasiya ,Sagar. Read, saw videos, spoke to PadamShri Subhash Palekar and followed his natural farming method on our ancestral land Padma farms in Bhopal. The response from friends & relatives is inspiring. The flavour , taste & aroma are amazing , the flour doesn’t turn black even if kept overnight . His perseverance, discipline ,focus has become talk amongst farmers in our region who now themselves buy wheat from us for their own consumption.

The traditional method for flour in North Indian families is to buy the entire wheat in bulk for one year, clean, sort and store properly. Then before grinding, the wheat, is soaked in water, washed, dried and then sent to be milled in the chakki. My mother still follows this practice.

1:33: Different popular brands of atta are categorized into 5 major categories. 2:09: The dietary fiber content in atta brands in category 1 ranges from 9-12 grams per 100 grams. 2:34: Four important factors to consider when buying atta are the type of wheat seed used, use of harmful pesticides, grinding method, and freshness. 4:42: Sharbati atta is marketed as superior due to its soft texture, but it is not necessarily healthier. 5:30: Multigrain atta from popular brands contains mostly wheat flour and defatted soya flour, making it less nutritious than claimed. 7:02: Making homemade multigrain atta with specific grains can be a healthier and cost-effective alternative. 9:20: Ancient wheat varieties grown in different regions of India have similar taste and are better for health. 10:22: Freshly ground atta with bran is preferable over packaged atta stored for months. 11:00: Desi wheat grain is recommended for those with digestive problems, gluten intolerance, inflammatory issues, or those seeking high-quality food. That’s what Indians ate instead of wheat and flour long time back. When British came they forced farmers to stop farming millet and forced them to plant corn and other stuff. This caused bad effects on Indians health. If you google you will find history of millet and what British did in India.

Being a flour Miller myself i know this. Although our product too uses hybrid wheat and fast chakki, we don't use the harmful pesticides that Aashirvaad and Fortune companies use after grinding atta. No doubt their products stay fresh so long on shelves. If you keep a Aashirvaad or Fortune packet for year too without opening, it will still be same from inside. That's not the case with our no pesticide atta which will go bad within 3 months even if not opened.

Vivek; my complements on this very useful and very well presented video. FYI we have an ancient variety called " Chawal Kathi" grown by Subhash Palekar Prakritik (SPK) technique at our own farm in Bhopal. This long grained wheat has highest fibre and lowest gluten (possible in wheat). The taste is simply amazing. Will like to send you sample for you to try; need your postal address.

We buy whole wheat for the entire year when it's wheat season and then store it by coating it with caster oil. Then we make flour as needed. The caster oil coating makes a lot of difference between store brought atta and home stored one. Home stored one's roti is more soft, doesn't get rubbery after getting cool and it's also more tastier.

Don’t castor oil upset the stomach? I buy Lulu Atta which is freshly produced. It makes very soft rotis. If I need multigrain I mix besan and barley flours or soya and barley flour.

@@world-of-susan. Yes but it helps when taken in very small quantities. Here I'm talking about very light coating just so that we can store it the whole year. that's it, no more oil than that

We use simple formula, 6kg wheat + 1kg soyabean + 1kg black gram + 1kg maize + 1kg millet. Can't store the chapati otherwise it will become dry and rough after 4-5 hours. We also tried to mix barley in it but I was not able to digest the gluten in barley. If I was eating it since my childhood then maybe I could.

Since my father has turned out to be a diabetic person, we use chakki grinded multigrain atta with customized additional attas in it. Trust me it's rotis taste better than previous aashirvad normal wheat.😋 PS:- Nowadays multigrain roughly costs as much as normal whole wheat 🤑

Here in USA, I have tried various aatas and finally decided aashirwaad is best for making rotis. We bake our own bread at home and aashirwaad works best for that too. Aashirwad sharbati is much worse than the ordinary one, I didn't find the multigrain to be any better. Aata coming from Canada is terrible. If it says product of Canada or Australia, then don't even touch it. It is not only bad in taste but also mostly maida. Similarly, when I was living in New Zealand, I found that Aashirwad coming from Australia was of very poor quality and I had to travel long distances to Auckland to find aata from India. So not all Aashirwad is equal. I dont think any of them have quality control.
