INGREDIENTS
8 tablespoons (4 ounces) unsalted butter, frozen, plus more, for the pan
2 1/2 cups all-purpose flour plus more for shaping the dough
1 tablespoon baking powder
1 teaspoon granulated sugar
1 teaspoon salt
1/2 teaspoon baking soda
2 tablespoons vegetable shortening, at room temperature
1 1/2 cups whole-milk buttermilk, cold

I love how Carla described how she eats biscuits and how she reflected on her childhood and her grandmother. I kind of felt I was there, too.

We picked strawberries and wild blackberries last week and I made jam... They were so good, I was really proud. These biscuits took them to a whole nother level tho!!! They were so good!!! I opted to cut them into squares just to handle the dough less... I also brushed the tops with butter and sprinkled a tiny bit of kosher salt on top and they were sooooooo flaky and delicious!!! I reheated a couple in the oven the next day to make my mama some strawberry shortcake and I swear theyre even better the next day. They were so buttery and the outside was crunchy and crumbled so cute and the inside was moist and fluffy--literally perfection. This is my new go-to. much love to you and to carla!!!!

If you don’t have the proper cutter sometimes I will just cut my biscuit sought into squares with a knife. No waste and minimal handling of the dough❤️stay safe and healthy everyone.

King Arthur's flour has a diamond biscuit cutter (multi diamonds). I love it. I can pat my biscuits into a rectangle. Lay the mulit-diamond cutter on top of it, and then take the pieces that don't fit fully or are overflow into the empty slots--reduces handling. I have had this tool for years. Though I don't mind cutting them into rectangles.

Precious biscuit taste tester! Great technique. Cat and mouse biscuits! Thanks for this. I'm lazy and I use my food processor. Using very delicate taps of the pulse button, and then play cat and mouse patting on board. I have a cutting tool that cuts into diamonds --several. I make rectangle, set it the multi-diamond tool on top and press down. Whatever spills out, I pick up and put in the empty slots. Eliminates any overworking and I can manage even sizing.

I remember when Carla was on Top Chef and she made the most lovely roasted chicken with tons of butter rubbed in all over it. I'm so glad she's made a career out of it. she's a great cook!

If you do just want a round form, save a can from canned vegetables and keep that for your cutter. Just use a can that you can cut both the top and bottom out of for this purpose.

Add 1 Tbsp. of white vinegar or lemon juice per 1 C of milk, stir and let it sit at room temperature for 10 minutes.
