Flavoring and Roasting Raw Almonds

This is one of the few videos I've seen, that show doing seasoned nuts somewhat similar to the way I do mine. Mine is a little more lengthy on the ingredients, but perhaps simpler. I mix the ingredients listed below, and then spread over about 3 or 4 lb of nuts., almonds, and walnuts. First you mix all the ingredients thoroughly. Then pour them over the nuts making sure all the nuts are moistened from the process. Then, you can bake them as she did in the video, or run them in the dehydrator, or my my typical go to method is the microwave. I put about a cup and a half of nuts on a plate, and then put it in the microwave for 1 minute. I then pull that plate out and let it cool while I do the same procedure multiple times with each plateful. I then repeat the process doing a second minute for each plate. The first time through the microwave, I cover each plate, with another plate which creates a little bit of a steaming effect on the nuts. And then the second trip through the microwave, I just put a paper towel over the nuts to allow any steam to evaporate. Let them cool for about 15 minutes, and then you can dump them into a bigger pan and cover it with a towel and let it sit open like that for a day or two. NUTS SEASONING (Jerky like flavor) 11/2 cup water 1/4 cup soy sauce 1 tbsp Liquid Smoke 1 tsp Worcestershire 1 tbsp paprika 2 tbsp chili powder 1 tbsp garlic powder 1 tbsp pepper 2 tbsp seasoned salt 2 tbsp salt

Thank you Kimberly, was just looking for Temp/Time for roasting almonds. Going to make Almond Butter tomorrow. I sub to Bigger Bolder Baking & she shows how to do this, but she said they have to be Roasted Almonds. Me not having a clue & here I am. Thanks again!!

interesting technique with the egg whites. I'll have to give that a try.

I've found that it binds the seasoning better than just tossing it with olive oil. The egg white is essentially dehydrated during roasting, so they're shelf stable too!

Just want to check how long can you store these almonds before they spoilt?

If you keep the almonds cold and dry it can be a couple years. If you leave them out just make sure they have as little air in the bag as possible.
