I JUST made these and am waiting till totally cool to pack up for gifts for tomorrow (Christmas Eve). These are SO easy even a barber can make them! They really do look like some gourmet store gift. I used 4 cups of deluxe (no peanuts) mixed salted nuts so I left out the salt. They are delicious! Thanks so much Chef John!

I made these this holiday and they turned out great !! I wanted to make them more Christmasy so I used Saigon Cinnamon and ground cloves for the spices. I used Muscovado brown sugar, Ghee and water for the glaze. Perfect !

I've been making these for 3 years now, very easy but I usually have to cook them for a little longer than he says. if you don't they can be stickey and the nuts aren't as crisp. I think I use 12 minutes, stir then another 12. it probably depends on your oven.

I made a variety of this just yesterday... ate like 200g of almonds with 150g of sugar and now my stomach hurts ^^ But it was worth it! roasted almonds is a very typical and traditional treat on German christmas markets. But instead of buying a 100g satchel of almonds for ~3€, I can easily make three times the size for less than an euro!

Made this today (2/21/2024) and they were AMAZING nuts! 😂 This was my version so I can reference in the future… -half batch (2 cups) mix of hazelnut & cashews -all other ingredients were halved except for chili pepper Notes: -baked to exact timings as mentioned in video and batch was nice and toasted, golden brown -remember to mix after the second bake before it cools completely so nuts are coated evenly and there is no thin sheet of solidified sugar at base of tray
