I've seen so many examples of vintage recipes where the flavors are... underwhelming. Maybe spices weren't widely available or were prohibitively expensive, or maybe folks just weren't ready for intense flavors (I know it took a long time for garlic to be an accepted in the US). Anyway, I like your idea of adapting and improving the recipe. And I'm glad to hear the additions to the glaze helped!

I think you might be right...and really our modern palette is pretty used to flavors from all over the world. Back then (rationing didn't help) and before people just didn't travel as much ci think there was also not a lot of knowledge past the seasonings you grew up with. I think it's definitely worth trying these old recipes and making adjustments as needed...because as a base recipe they're pretty good!
