Chef Alden, Thank you. I think I have forgotten how much I loved to cook Cajun. I'm alone now - husband passed, kids gone to live their life, so I kinda quit. But now with you suggestions of freezing for later I think I may get back into it. Louisiana cooking is usually for many people but no more. Thank you.
