2 wheels = 2 motors, double the cost and size. That setup will definitely work but 1 motor would be ideal for production!

One wheel with a rubber surface and where the hopper feeds into the wheel, give the second surface the BB catches on some flex. Rubber surface on a plate that has a small spring behind it so there is just enough grip to throw the BB but allow it to bounce a bit so the next BB can slide in. Fully auto paintball guns will also have a motorized hopper to feed the ammo quickly and prevent the paintball from colliding in the barrel... not sure if that would be necessary tho.
