I love that you raise the stone higher into the dome. I came to that same conclusion a couple years ago and have never gone back.

Ron has definitely upped my pizza game. I actually even did it on my new portable Akorn JR for my camping trips. Gonna add the screen trick for sure.

I use the top sliding shelf of the eggspander to put my pizza stone or my pizza steel on. Works really well.

Hi, Thanks a lot for the very interesting videos. I'm thinking of buying a big green egg xl and I don't know whether to opt for the wooden cabinet or the metal one. What do you advise?

Hi Paolo, That is a great question. I would say that it really depends on where you plan to keep it. If it will be outside, exposed to the weather, I would definitely opt for the metal table. If it will be covered and protected, then the choice is really up to your preference of which looks better. For me, overall, I prefer the metal tables.

@Fogo Charcoal I have yet to make a pizza on my XL Big Green Egg. What are your thoughts on the temp gauges that you have on both your green eggs? Are they more accurate than the True-Tel? Pizza looks fantastic by the way!

Hey Ron, going to try raising the pizza stone up for tomorrow's cook. Would a dutch oven turned upside down work ok or would it trap the heat in it?

@@andrewpope204 You know Andrew, that is a really good question. I honestly do not know if it would make a difference or not. Make sure you have enough clearance to close the dome.

Captain Ron, would you recommend using raw meat or cooked meat when making meat lovers pizza on my big green egg? Like Beef, Ham, Steak, Sausage, Chicken etc, Pepperoni is easy because it comes in a bag for Pizza. By the way I've purchased a XL Big Green Egg to go with my Large Big Green Egg because that's what you use....Thanks for inspiring me. I only use Fogo Charcoal now because t's the best. Once you Fogo you'll never go back!

I would definitely use cooked meat. If using steak, put it on right when the pizza is done or when it is just about ready to come off the grill.

Your store bought dough looks a lot more fluffy than mine. Are you supposed to let it sit in a dish for a while to fluff up before you stretch it out?

You can definitely let it rise a bit before stretching it. I find that dough that i get from TraderJoes etc definitely benefit from sitting out for an hour or so before stretching. Dough from a pizzeria, not so necessary.
