You should look into using gelatin sheets! They don't leave much of a gelatin taste and are much clearer. Your coke jelly looks even better than the real thing. You think they do the same thing for advertisements? Haha.

For clear jelly I might recommend Agar Agar you can usually find it in health food stores. It’s what’s used to make those clear water drop cakes
