Niet lang terug heb ik uw kanaal uitgevonden en ja!!!!!!!!! The best bami in my life came from an old javanese man selling Bami on the streets in Paramaribo. He sold it in banana leaves!

U where so lucky to have met that type of leaf Bami. Its very very hard to find il like that. You mostly find Barkat and Gudangnan and Pitjel in leaf.

Thanks for this recipe. My Bami came out perfect, just as I remember it ! Kentjor is the same as galangal : Kaempferia galanga, commonly known as kencur, aromatic ginger, sand ginger, cutcherry, is a monocotyledonous plant in the ginger family, and one of four plants called galangal. Wikipedia

Finally a video about how to make this the old fashioned way. I've never cooked with kuntjur and seldom use trassi, because my family doesn't like the smell. But since those seem to be key to getting the right taste, I'll try this when they're not at home. Thanks and good luck to you!

Thank you kindly and you can omit the kentjor, that is optional for bami. For nasi goreng you have to add 3 or 4 pieces or a little bit of the powder, but for bami it's optional ;) Let me know how it was! :)

Hi Amaru, Thank you so much for this recipe. I tried it and it's the best. As I was cooking, my son and his girlfriend came into the kitchen to see what was smelling so good ..... unfortunately..... at that same time I added the shrimp paste .... and boy oh boy .... my son ran out of the kitchen due to the pungent smell ....😂🤣🤣 .. which made me wondered if he will want to eat the bami. 1 hour later, we ate and my son said that this bami is his new favorite food. 😘😁 I was so proud of myself.... I lived in Suriname for 9 years, ate bami every Saturday at the market, but I never learnt how to make it. Now that I'm living in California, I craved it. I found all the ingredients, except the bami noodles in the Asian supermarket. So I used spaghetti instead. Thank you again from the USA.

Amaru the best bami i ate was at a very old lady who came from Java Indonesia. Mama Mastini was her name. She use to live in the back of the Cuul where some old Javanese use to live. She use to cook like heaven on earth. This was befor she passed in the eraly 1980s. We never knew how old she was. All people from LVV and around the aerea use to go and eat there at her small wooden house. Even her Souto was totally different. I never forgot Oma Mastini her name. Blijf doorgaan met je kook kanaal. Yes she did cook greens but it was served as a different dish. Tjapar, mix other stuff. With a gravey. Top man en beste wensen.

@@foodandthesingleguy haar werkelijke naam was Mbok Siti. Haar kleinzoon was gister by mij. Hy is ook naar dat oud huis gegaan en met die nieuwe eigenaar gaan praten en ff met hem gezeten. Alleen omdat ik hem na mijn schrijven heb gekontakt en gesproken dat zijn oma opkwam in mij. Ook danzij jouw filmpje. Ik debk dat velen aan ouderen beginnen te denken die ons zijn voorgegaan. good recipe and very right about no vegs lol. Also try with oven chicken and/or sate. I wouldnt suggest ever using the prefixed ingredients though, that's crapp. If u dont have a mortel u can cut things up small , also works fine. And for people who like vegetables can add pitjel(plain cooked vegs) as a side dish with the spicy peanut sauce . When on vacation in Suriname i went to my neighbour, a old javanese woman in Surinam to buy bami for breakfast, only with homemade peanut sauce with tamarind on top, cold and wrapped in a banana leave. It was fingerlicking good.

Hi there Bibi :) Thanks for stopping by, first of all. Where are you located? If you can find good old spaghetti, you're good to go :) There are so many varieties of the bami noodles in my country, but a lot of people also use plain spaghetti to make this dish ;) Let me know if this has helped!

Ik zie hieronder veel reacties in het Nederlands. Your English sounds like a man who was born in Suriname and was (or is ;) in America for a while. Anyways! Ik heb vandaag in een opwelling jouw versie van de echte Javaanse bami uitgeprobeerd. Ik zat vandaag in de bus een snack te eten die ik van huis had meegenomen, uit een plastic zakje en nog in een stuk bakpapier. En plotseling kreeg ik een flasback van een kleine portie bami (Javaanse wel te verstaan!) in een stuk "cut right" gekocht bij een maé die in Paramaribo op dat schoolplein kwam. Die bami at je met je hand, en die smaak...........oh die geur! Ik dacht ik ga mijn best doen om DIE bami te evenaren. En ik kan niet anders zeggen, ondanks dat mijn trassi ietsjes verbrand is komt het behoorlijk in de buurt. Take 2 will follow soon. Thank you for sharing your authentic recipe

Je neemt me terug in de tijd van de MULO school... we hadden ook een Javaanse mevrouw die bami verkocht ZONDER vlees, alleen die bami... en ze deed het in boterhamzakjes... groot 2,50 en klein 1 gulden... WOEI :) :) Je moet de trassi niet laten branden. Je kant het het beste heel fijn met een mes snijden, want als je het hele blokje meebakt, lost het niet helemaal op. Maar als het je gesmaakt heeft, dat is het belangrijkste ;) Thanks for stopping by en te tra lesi baka :)

FOODANDTHESINGLEGUY Jaaaa het was idd de MULO waar we op zaten....bami zonder vlees en a bin swiet soté! Ik had voor de verandering een potje van die trassi pasta gekocht, ik ga lekker weer terug naar t vertrouwde blok. Ik ga nog voor de retry 😉 wat heb je veel video's staan dat wordt een leuke ontdekkingsreis qua Surinaams koken en ETEN. Grantangi and til next time

Mijn herinnering is bamie in blad ,met een lekkere Javaanse tomatensambel erbij. Op de lagere school toen voor 10 ,15 of 25 cent en later ook op de MULO. Hoop het ooit op zo'n manier weer te eten.

Jazekerrrrr, hou op schei uit... krijg gelijk honger, hahaha ;) In Suriname serveren ze het nog steeds zo, op de Saoena Markt aan de Jozef Israelstraat... En ja, op de MULO school heb ik ook voor 50 cent zonder en MET VLEES voor 1 gulden bami gekocht... memoriiiieeesss!!! :) :)

Hi, do you mean the shrimp paste powder? I didn't use any shrimp sauce... But the shrimp paste powder (trassie poeder) is available at the toko or the Chinese supermarkets ;)

This guy is waaaaaaay much better than all the female on youtube who make javanese bamie with vegables, casaerots, mixing shit spices like nootmuskaat, oreander and cook with butter. 'Indonesian bay leaf' ook genaamd "Daun Salam", heeft net een andere smaak, het blad is groter en makkelijker breekbaar dan een laurierblaadje ;)

I'm for reeeeaaalll, lol lol ;) I mean, I see certain folks butcher these traditional dishes from my country and it pisses me off... and get this: they wanna tell ME how it's done... So hence, they're full of it, lol ;) And no, you don't use all of the trassie, you just use a little bit. It comes in a 2 inch square slice, you simply chop it in 4 and use 1 square, which you chop up with a sharp knife, because it needs to dissolve, see. That's it ;)

Thanks for pointing out common mistakes people make when preparing this traditional javanese recipe. Still I have to point out a couple of things. From what I can remember, is that the javanese grannies in the old days didn't have sweet soy sauce or chicken stock powder. They only sticked to the galangal root (laos), daun salam leafs, shrimp paste, some salt and a just tiny bit of sugar and (although you've used it this recipe) no kentjor at all. Also, the type of noodles you're using is of a special brand which already got a slighty sweetness to it. I've used it once, so I know. It's a modern day issue, so people can't help it if that's what's offered in the stores nowadays. Nevertheless for the real deal plain and old school noodles is needed for this recipe. It's a very simple dish, but with the right balance of ingredients, you don't even need meat to go with. Only little bit of javanese hot pepper sauce and you're good to go.

Top recept! Probeer al jaren die smaak na te maken die ik ken van surinaamse eettentjes.. Maar mislukte altijd. Was wel zover dat ik wist dat er kentjur in zat. Dat leerde ik kennen op een kookcursus op bali. Stampte die kentjur blokjes fijn. Maar dat overheerst inderdaad.

Hoi, dank je ;) Nou, het moet eigenlijk met zoete ketjap gemaakt worden, maar sommige mensen doen ook half om half (dus rode en groene dop - rood = zoet, groen = zout). Kijk maar, het is helemaal naar je eigen smaak. En eigenlijk moet er ook palm suiker in, maar omdat de ketjap al zoet is, heb ik het er niet in gedaan ;)

Dank je, maar in Javaanse bami gaat er GEEN suiker... Nog nooit van gehoord en ik heb Javaanse familie... In de bami sambal die men erbij serveert zit wel suiker en je gebruikt zowel zoete als zoute ketjap, dat is het enige aan zout dat erin zit... Thanks voor het kijken ;)

Wat een top recept! Maar ik had nog even een vraag de uien ect die u gefruit heeft komen geheel te vervallen als de bami kruiden uit het zakje worden gebruikt ? En de trassie is ook een must ?, bij kruiden uit de zak of verse gesneden altijd trassie gebruiken ?

Hoi Malady, dank voor je bericht en dank voor het kijken. Nou, kruiden in het zakje zijn gedroogde kruiden en daar zit ook uiten in. IK gebruik liever verse kruiden en inderdaad, als je de kruiden maalt, dan smelten ze als het ware in het gerecht. En JA, trassie is een must, anders is het geen Javaanse bami! Het ruikt een beetje sterk, maar het is echt wel nodig :)

Hahahahahaa, hoooiii! Ja joh, ik heb heb er een bloedhekel aan als men traditionele recepten gaat aanpassen en verpesten, zoals velen hier op KZbin... Ik vind dat traditionele gerechten moeten worden gepresenteeerd zoals ze zijn. Ik maak per slot van rekening ook geen boerenkool stamppot met Chinese kool of rode kool... snap je? Maar als je mijn receptje volgt, weet ik zeker dat de smaak zal zijn zoals het moet ;) Alvast smakelijk eten!

Hahahaha ;) Nou, kijk op het pak wat de aanwijzingen zijn. Een pak bami van 500 gram, daar heb je toch ongeveer 2 à 3 liter water voor nodig. Leg de bami in een pan met water en breng het water aan de kook. Roer de bami door het water zodat ze niet aan elkaar plakken. Zo gauw het water begint te koken, de bami gaar koken in ongeveer 7 tot 12 minuten, let er wel op dat elke bami anders is. Lees daarom op het pak wat er staat qua kooktijd. Als de bami gaar is, in een vergiet doen en onder de koude kraan afspoelen. Goed laten uitlekken voordat je het gaat bakken... Hopelijk heb je zo genoeg info :)

Niet in de war raken ;) Je hebt de laos (galanga root of sweet ginger) en de kentjor (AROMATIC ginger), die moet je meebakken in een beetje olie. Daar geef je de bamie smaak mee. In de marinade voor de kip doe ik alleen wat laos zodat ook de kip de smaak van de laos krijgt tijdens het marineren. Als je de kip gaat stoven, haal je de stukjes laos uit de marinade en die bak je even mee met de uien en zo. Sjjjjnappie? :)
