In this video I am sharing a delicious protein rich appetizer recipe - vegetable skewers with mushrooms and tofu. This can also be a healthy snack, part of a meal, perhaps even a meal on their own. The recipe is completely whole food plant based. Give it a try and let me know how it went. I really hope you'll enjoy it.
Ingredients:
500 g of tofu
1 medium zucchini
1 sweet pointed red pepper
250 g of mushrooms (preferably small size so that you don't need to cut them, you will get a rich flavor)
Spices to taste:
Salt, pepper and mixed herbs
Preparation: cut tofu, zucchini and pepper into equally sized slices. Place main ingredients in a large container and add spices. Make sure everything is nicely coated. Bake for 20-25 minutes at 220 degrees Celsius. Makes about 6 servings (12 skewers). Bon appetite!
You can store them for about 5 days in the fridge. Can be enjoyed hot or cold.
