Those fried potato mochi are very similar to an Irish Potato Farl, a flatbread which is fried on the griddle and which primarily consists of mashed potatoes bound together with flour or potato starch. And yes, they are absolutely delicious, so having one that has been soaking in delicious broth sounds amazing.

Unfortunately we cant exactly reproduce the dish from the anime. Idaho spuds doesn't have the best starch content but then again there aren't that many varieties available in the US to begin with. Maybe we can try experimenting with Yukon golds or the red skin potatoes and see if they hold up as noodles better. Time to "keep playing with your food"

Idk why, but this video and the bacon my brother had inspired me to make “Bacon Ramen”. I set the bacon on medium low and before the bacon crisped up, I hit it with soy sauce, red wine vinegar, and fish sauce, which made the bacon not have that film when you take a bite. I sprinkled thyme on one side of the bacon and ginger on the other In the same pan, I chopped up some garlic and add it and cooked the garlic in the bacon pan until it became frangeant. Before it browns I added 1 3/4 cups of Chicken Stock and 1/2 of dashi (I used instant.) Add dried rosemary to steep. When the soup started to boil, I added the ramen and broke it apart so it cooks evenly. Before I covered it, I added one egg because I was too lazy to make a soft-boiled egg. I put it on for 2 minutes and 45 seconds. While it’s cooking, I chopped up the crispy bacon. Since I didn’t have a starch to work with, I decided to mix cold water and flour together in a microwaveable Smol bowl and hit it in the microwave for 30 seconds. Every 15 secs, I stirred it. When the timer is up, I added the fake roux and stirred it without breaking the egg. If it’s too thick or not that much liquid, add some more chicken stock. When it’s done, add it to the your favorite ramen bowl and add the chopped bacon. I was surprised how light it actually tasted. You still taste the fatty bacon, but you got hits of the vinegar and the herbs when you bite into the bacon. The soup itself tasted like bacon, but you can still taste the dashi and chicken in there. I was pleasantly surprised.

Potato and sweet potato noodles are actually a thing!! You can usually find them at asian super markets so it's a lot easier to make except for the fact that you need to soak them in water for a few hours prior to cooking (still easier than making it from stratch imo). Theyre commonly used in hot and sour sweet potato noodles and malatan
