I'd love to see a longer episode of Pass it On at some point. Something like...100 or 150 minutes instead of 50, but the theme is something really big or complex, like...Three Course Meal. Or Holiday Feast. Then each person goes 2-3 different times for ten minutes at a time, so they can see how theirs (and others!) ideas have been destroyed in real time. Ideally in a truly random order: Put all 5 boys names in a hat 2-3 times each, then draw for the next person! I thought that was really fun the once and mixing it up by making it longer could be really chaotic. One person could be at the beginning or the end, or one person might go three times in a row!

The anti-foodwaste movement is more about preventing perfectly normal food from getting tossed. So finding a use for mushy bananas and left-overs is more important than creatively using pits.

I do use the peels of fruit. I candy them and cook cupcakes. For vegetables, I use them instead of the edible parts when making soup stock. I compost them after steeping, I don't eat the vegetable peels, just steep them. I also use the water from boiling veggies to cook my rice. I mean that's what a soup stock is. Boiled veggie water. I get as much value as I can before tossing it. I don't cook with my used coffee grounds. I spread them on my garden. I don't try to use the pits of fruit, I just compost that bit. I'm a poor university student. Eating healthy for as cheaply as possible is a main goal. It does mean that my cooking takes longer. I mean, I spend 40 minutes making the water I cook my rice in. My food does taste amazing though, and I spend less than $5 a day on food.

Agreed. They don't seem to know the difference between ugly, spent, inedible, and waste. Apparently, there is some way to eek out flavor from cherry pits, but that seems more like a hack for when you've already used all the flesh. The pits are still going in the bin. Just make it a compost bin and have dietary peace.

Theme for next time: Use what has been left for you: You are not allowed to use the ingredients you picked ourself, just the one coming laters are allowed to use them. Mike goes first and last, first he picks 5 ingredients and then leaves and comes back to cook as the last person (he has good ideas sometimes). Chefs are allowed to pick 1 ingredient normals 5 to add for the next cook at the end of their turn, let them think about the order themself. Salt and Pepper do not count towards the ingredients. Chefs are not allowed to come after each other. It is a more complicated suggestion but probably a fun one.

To be fair, Barry didn't set him up well for that because candied citrus peel isn't very good if the zest has already been taken off. So even if he had gone on to candy the peel, the boys might have rated it as a "fail" at the end because of the taste.

I have a compost bin in my backyard. When ever I cook all of my scraps go into the compost. obviously I don't put oil dairy or meat in it, but it really helps with my food waste.

Industrial composting should really be implemented everywhere! Then you can compost everything, dirty paper towels, meat gristle and bones, dairy, etc. We have it in Seattle, and between the awesome composting and recycling programs, we almost never fill up a trash bin!

Honestly, I think James did the worst. He had two normals coming after and sort of set them up for failure. Barry, however, did the best (in my opinion). I know shocking, but he had a great starting foundation and kept the waste on the board for 4 people to figure it out in 40 minutes. Great episode though. Love the Pass it on challenges. Keep it coming. :-D

I come back from holiday, nearly recovered from sun-stroke, and I am greeted with this: a zero-waste video in which the first thing anybody does is cut the good bits out of a bunch of lovely-looking strawberries. We visited the Tiptreee factory last year and went on a tractor-tour around the facility (it's huge ;-) and one of the things they wanted to make most clear is that you should always eat *all* of a strawberry, including the green bit (not the stalk necessarily although you can), because that part of the fruit contains much of the goodness…so we've done that since and actually they even taste better for it!

Ben has a lot of fringe knowledge on food. You can tell he's passionate about conservation. He once said a rind of some kind was good for keeping slugs out of your garden. I get the feelings he's read a few organic gardening books.

The longer I watched the video, the more I appreciated how difficult this challenge actually was! At home we wouldn’t think twice about throwing stuff like broccoli stems and citrus peels in the bin, but they can both be utilised assuming you’ve got the knowledge and creativity that would put ingredients to good use that would otherwise be wasted!
