I think that politely(!) asking if it is halal, just as well - kosher, vegan, is not offensive to the seller. Just as polite answer - yes/no/not sure. Street vendors often do not label their product with these labels unless they are targeting customers with such requirements. Also, detailed ingredient lists are usually not included. Therefore, any person with an allergy or intolerance can ask if the chosen food does not contain any allergens, and this is only normal. I do not see any offense or cultural insensitivity in such questions, these are normal customer questions for the seller. As usual, it all depends on the tone of the conversation on both sides.

Most people understanding of halal is no pork/alcohol but in actual it goes way beyond that. This is why many Muslim relied on gov websites, travelogue or even planned ahead to be sure instead of asking randomly on the spot. Most don't care if what they are selling is halal or not because tourist usually don't come back for second time.

You’re missing the point. Ethics completely vary when it comes to different kinds of cultures, societies, religions, populations, etc. Ironically, you critiquing the idea of eating live animals comes from a western culture. To many others around the world, eating live animals is not the same as our definition of animal cruelty. Meanwhile, other cultures could critique the western world for other things that we think are completely fine (e.g how Muslims view eating pork). It comes off as xenophobic to say that Thai people are morally wrong for eating live shrimp which to us is unethical or “not right” since you have to realize that not everyone thinks like us who live in a western society (and that ethics differ from person to person). Obligatory ETA: no, being someone who lives in North America I do not personally believe in eating live animals, but I’m also not going to say it’s morally wrong or disgusting for other countries to use live animals for consumption.
