It had been a while since I had filmed a biryani making episode. And so when the opportunity arose to film the complete process of a biryani whose recipe has remained constant for over a century, I lost no time to head to Taj Hotel Shivaji Nagar, an eatery that dates back to the early 20th century, and today churns out over 500 kilos of biryani each day. I met with the third and fourth generation of the family of the late Janab Abdur Rahman, who are committed to preserving the ancient traditions that go into the making of their biryani, including cooking it over a wood fire only.

What is special about this episode from Mr Kripal is the present owner along with the young owner to be,were there through out the shoot answering the journey so far. Hope that young boy will strive every harder to carry forward the legacy further.

Respectfully my suggestion is to once try Jabbar Bhai (Food Area Tamil) KZbin channel He doesn’t hide any recipe & gives exact instructions to viewers on Measurements To be very frank I am a briyani expert now following Jabbar bhai He is no more in India & in Dubai now, He recovered his ROI in just few months & planning to get a partying boat for his customers in Dubai 🤪 he is planning also for outlets in other countries I would suggest to cover him once Ate his briyani once while I was at Dubai (Master is always the best)

Thank you Kripal for bringing out this episode about Taj biryani. Probably it was year 1971 that I first tasted Taj hotel biryani in Shivaji Nagar and visited this 4/5 times thereafter. Their biriyani used to be really good. It's really great that the owner stood throughout the shooting and answering very politely about the process. Wish they continue serve their delicacies in future also.

I can say for many middle class Bangalorean, Taj briyani would have been first mutton briyani experince in resturant apart Christian & Muslim weddings. Taj kindles memories of Christmas shoping & squezing through crowd during Mary's feast with family during childhood days. I always bumped into old friends or known people at Taj. Mom would get briyani from Taj and dad would always take us to Ashok hotel for masala dosa & coffee oppsite to Taj another icon of OPH road chok.

Having tasted most of the Biryanis across India, I can vouch for this Biryani. The aroma of the zeera ka samba rice, the mellow masalas, the fall of the bone tender meat drenched in Aqni makes it the b😊est biryani. This is the Arcot style biryani that is prevalent across Tamil Nadu and Karnataka. Go to any muslim marriage in Bengaluru, this is the star dish.😊

The western and Japanese Kitchen is very clean and pots are washed daily to keep bright clean. when I was a student in Europe and summer time went to London and other cities and worked several summers in the so-called Indian restaurants(Bangladeshi) for 2 months each time. They cook biryani, pilau rice and poultry, beef, mutton(sheep), chicken and Shrimp, and lobster Indian way(curry plus tikka and tikka masala. Only one time worked in the Kitchen, the rest of the time worked as a waiter+ barman. Even at home I learned how to cook by watching grandma, mother, and unties. Almost Even today I cook food myself living in North America and I'm 60 plus now., but eat a lot of fish.

Biriyani made in Bangladesh and West Bengal is very similar and both Muslims Hindus, and Buddhist Christians eat the Biriyani, but in Dhaka, Kacchi Biriyani is the most popular and found in the very old part of Dhaka and the road is full of people.

Kripal this place was earlier 3 or 4 shops behind that is OPH road besides current TAJ and this new building as owner mentioned has been here for last decade. As you mentioned it is word of mouth that this place has been so popular and has customers yearning famous Taj Biryani. It is continuing down and hats of to such entrepreneurs who retain the original and continue the traditional recipe. Well Kripal this is one episode which is close to my heart. I still remember going there for our fav biriyani each year in the 90s. I still remember my dad taking us there in his Luna and TVS 50 later, when I was in my early teens and well before for which I don't have my memory of😂. Awesome place. Great food always. But the ambience fell down after 2010s.. nice to know they are taking efforts to restore that. Waiting for to visit again next time when I am in Bangalore. But truly took me to the Bangalore Hey days.

After watching the video, I decided to visit the restaurant. Unfortunately, the experience was disappointing. There were serious hygiene issues - all four biryanis we ordered had hair in them, and the plates weren't cleaned properly. Moreover, both the chicken and mutton were undercooked and very tough to chew.

We visited the place after this video but it was completely disappointing 😢. Rice was a bit undercooked. Ordered Seek Kabab which was oily. Raita was not fresh. Waiters were day dreaming in middle of afternoon. A meal for people for 2 costed around 900 Rs. Best biryani and quantity no body can beat Hyderabad. This coming from a Bangalorean
