In the Old Delhi korma they usually add a bit of kewra or gulab jal at the end, just for a good smell....after taking off from fire. Amazing that you are able to dissect your foods and pick up individual flavours and masalas....makes me feel like I have been eating like a pig all my life, with no discernment 🙂

Nice video, but I have to add that outside of India, people understand 'raw banana' or 'raw papaya' to mean an uncooked banana or papaya because 'raw' is the opposite of 'cooked'. In India, people call plantains/green bananas 'raw bananas' or unripe papayas 'raw papayas'. This does cause some confusion for me as well in your videos.

Karim's is hugely overhyped. The food is excessively oily & spiced in order to mask the poor quality of meat used. There are hundreds of eateries in Delhi which serve less greasier & better tasting food.

The problem with Delhi as someone who lives here is that, it's absolutely expensive to have a good meal in the restaurant, they say it's authentic but I have tasted the same if not better in Southern India and Maharashtra, Delhi needs to change this behaviour.

When we use curd in making gravy all the oil floats on the top. So dont think its too oily.

Pardon my observation.Sela rice is parboiled/converted rice. For all commercial biryanis, i.e. those that are cooked once and served over a long interval, say 3, 5, 7 hrs, sela maintains texture unlike raw basmati. Size of the handi has very little to do with usung sela or basmati rice. Kripal should visit Dhaka in the winter months and watc/experience the Dhakai Kacchi Biryani in person, and from a reputed bwarchi like Mintoo Baburchi and other ustads who cook for wedding feasts, particularly those of the Old Dhaka families. You will see gigantic deghs, 15-20 kg mutton per 10 kg rice. The kacchi is ready at a particular time for the wedding guests, just a very short interval. You will see bawarchis cook 500 or more deghs, each very large. Size has nothing to do with damaging basmati, but it is time-dependent. Once the degh is opened, needs to be served almost steaming. The next you visit delhi, consider connecting with KZbinrs GloablCentre and Spicelet for a most authoritative guidance through the best Muslim food places. you may choose to vist the Islamic Centre, Lodhi Road, with them and experience a non-restaurant but comfortable, luxurious settings and dedicated chefs.

If cooking is an art then definitely ur an artist the way you describe it, probably the only vlogger who tasted the curry dishes of Karims and explained each and every spices (overpowering)so well.also when you asked if that is goat it reminded me of the butcher shops of Bangalore where they kept both sheep and goat and sheep was in higher demand. And waiting for your reaction after eating Al Jawahar and Aslam overloaded with butter chicken PS -after doing the Old Delhi food walk sir in his head --ab toh ek hafta kamsekam sirf IF aur detox diet karna padhega

You went to completely wrong place. Try out Zaika and Changezi when in daryaganj. Aslam butter chicken. Al Jawahar instead of overhyped Karim.

Many such places in Delhi which are just running on its name are overhyped and have become pathetic nowadays. There hidden gems in Delhi which most people are not aware of. Since Mr. Kripal is a food vlogger they will surely serve him the best food. Not the ones which they serve to the common people.

Kripal you should have gone with Yahya of the globalecenter. He is from old delhi, he will take to the right flavors at the right place. Many people who don't have a history of eating snd cooking in the family and in weddings and feasts you won't get the understanding the soul of the food. Karims is a shadow of it's former self. But still a couple of things are good there it's kamiri roti with mutton sheek kabab, mutton burra and korma are decent. I wouldn't try the biryani in any delhi hotel being from hyderabad. .

Karim's is over hyped and over priced agreed but all said and done along with Al jawahar both of them still remain one of the best as far as mutton dishes go specifically in Delhi coz not a lot of places serve good mutton here and price of mutton is high every where post the lockdown
