I like smoked haddock, but it's one of those foods I can grow tired of very quickly. It was one of those things I was served at tea-time as a rare treat, poached in a mix of milk and water, with bread and butter on the side. This was a very simple meal but delicious, especially when the freshly poached fish was topped with a generous slab of butter that melted into he fish!

Finnan Haddie looks and sounds remarkably like another NE Scottish favourite Cullen Skink!

Possibly because that is what it is- the Americans have a habit of changing names they deem offensive, difficult to say, or in the case of foods, unappetising sounding. Let's face it: unless you were born and bred in the UK and accustomed to various dialects, 'Cullen Skink' doesn't sound as nice as 'Finnan Haddie'!
