You know what else is weird if you think about it. When a recipe calls for dipping chicken pieces in an egg wash, that's kinda brutal isn't it, it's delicious but brutal. Another thing, I was at Costco and had all my stuff on the belt, and L noticed that among other stuff I had a bag of pig ears (for the dog) a 12 pack of 2 inch thick pork chops a pork loin and some bacon, and i thought to myself, "Do you think any of these pigs knew each other?"

I would eat any of these foods before chitlins. They are vile. I quite enjoy liver and onions. If your liver is grey you cooked it wrong. It should be thinly sliced so you can sear it. Menudo is spicy and delicious. Tripe is from a cow's stomach, so it doesn't have the funkiness of chitlins. I remember eating eggs and brains at my uncle's cafe as a child. Brains don't taste like much, it's more the texture that some might not like. Have never tried scrapple but I would like to. You can buy haggis without lungs online. I do, because I like liver. Eaten with the traditional neeps and tatties (mashed potatoes and turnips), I find it delightful.
