Calamari can be derubberified by soaking it in buttermilk for 4+ hours, that is what the last restaurant I worked in did. They would fry it to a crispy golden brown (not light brown) and it would almost melt in the mouth. Try it!

Dear Chef, My friends and I ate this with squid ink sauce in Miguel de Allende and furtherd the enjoyment with a bottle of prosseco. While it did look like something Clingons would eat, we quite enjoyed the experience. I go to your blog often for cooking inspiration. Thank you Chef.

This is about the exact same way I make mine, the farther I moved from the east coast the fewer people would even think about trying this! Love that you put this out. Try a squeeze of lemon at the end instead of cheese some day when you are feeling adventurous & throw in some arugula before you add the sauce. ( or as a base for your stew, maybe minus the potatoes) Back home it was traditional to have calamari fritti with marinara sauce and lemon wedges as an app. Love this stuff & yes its either 45 or 45! Molto bene :)

I've eaten a great deal of calamari, and from my experiences, would claim it is the least "fishy" tasting seafood. It is really quite meaty and chicken-like. I'm not a huge fan of seafood, but *am* a huge fan of calamari. I encourage everyone to give it a try. It is especially good served alongside spicy tomato sauce.

Believe it or not, this is one of my favorite childhood dishes of all time. Mom adds a little cumin to make the sauce more aromatic, other than that it's identical. P.s. I live in the coastal Mediterranean city of Alexandria, we call this dish "Squid Tagine" although we rarely cook it in the earthenware.

Might be worth it to try fried calamari at a restaurant. I don't like sea food, and my wife is super picky but we both enjoyed it. (we tried it because someone got it as an appetizer platter)

Im guessing you could substitute the clam juice for high quality fish stock as I've never even seen clam juice. I did look on my supermarket website and they don't sell it. (ASDA - Walmart)

John, this looks wonderful. Your thoughts on adding a bay leaf and half a lemon (both to be removed before serving) and green pepper and carrot? My one experience with preparing squid was a disaster. I bought two frozen squid from an Asian market to make a buttermilk soaked fried calamari recipe I had seen on TV. I cook, and I had cut up a squid for a marine biology class in college, so I figured how hard could it be. Hard. The squid were angry, even in death, and not at all like the one I used in class. It quickly turned into a perverted science experiment that I wouldn't dream of serving. If I can find non evil squid I will make this. Your way first, and maybe try my mods if later.
