This stir-fry squid features soft, tender squid stirred with shallots and coated with an aromatic, savory, spicy sauce. Beyond the recipe, I will talk about the Chinese method of how we cook squid and make sure the flesh comes out tender and flavorful. It is super easy and quick, so let's get started.
Ingredients
2 oz of garlic chives, cut into stalks
1 inch of ginger, sliced thinly
4 cloves of garlic
4 shallots
1 Tbsp of oil to make the sauce
1 Tbsp of red pepper flake (2 tsp of mild, 1 tsp of spicy)
1 Tbsp of soy sauce (Amazon Link - geni.us/light-...)
1 Tbsp of oyster sauce (Amazon Link - geni.us/premiu...)
1/2 Tbsp of Laoganma chili crisp (Amazon Link - geni.us/lao-ga...)
1/2 Tbsp of hoisin sauce (Amazon Link - geni.us/Hoisin...)
1/2 tsp of cumin powder (Amazon Link - geni.us/cumin-...)
1/2 tsp of chicken bouillon powder (Amazon Link - geni.us/chicke...)
2 Tbsps of water
400g / 1.1 lb of squid, weighted after removing the inner organs
1.5 Tbsps of oil for stir-frying
1 red chili pepper
Replacement tips:
Garlic chives can be replaced with scallions.

My favorite food in the universe! Im from Idaho and was raised on a ranch. We ate little else but beef, potatoes and corn, and in the summer, cucumbers and tomatoes. Then I joined the army and was sent to the Pacific rim -- Hawaii, Japan, Korea, mostly. I learned to love all Asian and Polynesian foods. Squid is my absolute favorite, the spicier the better

Mandy, I must in all fairness, say this. Every one of your recipes I have tried came out perfect!! Even when I add my own touch to them, my friends love them! I have always loved Chinese cuisine and methods of cooking but you make it so easy to follow directions and your explanation of the whole prosses is so good that it would be hard to make a mistake. And I'm sure that anyone who has tried your recipes, would agree 100% with me!!!

I totally agree! I've tried a few: different bao recipes, wonton soup, Taiwanese beef noodle soup, scallion pancakes and several more. The step-by-step instructions really make everything easier, and the dish always comes out delicious!

Good Day, Seeing you cut the Squid 🦑 with that crisscross pattern reminds me of going to Chinatown in NYC. I had some friends from China and they took me to the places that Chinese people went. No English menus. One dish we got was called "Seafood in Birds Nest". A crispy basket of a fried root vegetable with Stirfryed seafood in the basket and the squid had that look. That was over 40 years ago and I still miss it. ✝️

Cooking the squid is very tricky. I never knew about the two minute rule, but I always knew around two minutes was the limit. I used to be a fish monger and we would do fish and chips at the shop, so I always did the squid for 1 min 30 secs.

thank you for your comment. my squid was rubbery though the recipe was followed. it may be because it took to long to fish it out of the boiling water. next time I'll aim for a lower number

LOL! Actually, smaller squids are has tender flesh. However, large squid was what's avaiable in my local Asian market so that is what I am using.

People say frozen squid is bad but I cook with it a lot and it seems good to me, and I love squid. It's all pre-cleaned, I buy whole tubes but you can get it pre-cut too. Just make sure to defrost it properly overnight.

Yes fry 2min only, or you'll boil for 2 hours to get tender again!!

I noticed that (as in some other recipes) you don't peel the ginger. So is peeling ginger unnecessary?

Asians rarely use salt because our cuisines are very sophisticated. There are dozens of condiments and sauces that you can use in place of salt. In the recipe, soy sauce, laoganma, and hoisin sauce are used.
