Oven cook the thighs and deglaze all that sticky fond with a touch of water and the hot sauce. Over crisp the skin, crumble and add it back to the mixture along with more melted butter. Once potted, top with melted butter to seal before putting the lid on - like a potted shrimp recipe would do, to preserve the contents for longer.

For one thing, ducks and chickens are different animals. For another thing, the cooking and serving methods of the two dishes are completely different. It was probably too harsh for me to call you an idiot, but your argument is completely incorrect.

I tried this recipe, it was fantastic, meant for a gathering of friends. It was so good a trip to Costco was made to pick up a shrimp tray to replace the wings in a jar my wife and I ate. My wife and I did "Enjoy"

I have made many of your recipes, but this drew the loudest praise from the dinner party. The only thing I did different, as you suggested, is I carefully removed the skin after the thighs were done cooking and deep fried them to golden perfection and mixed them into the dip just before service...they were so good. Thank you for the great recipe.

I used this as inspiration! About two years I tripled the recipe and used it as a spreadable chicken sandwich for some buddies and I. I used toasted sourdough as the bread. I've been asked to make this a few times now!

I made these for The Super Bowl and they were a big hit. I set up platters with a variety of mild to spicy hot pepper sauces so that everyone could adjust the hotness to their liking. I really liked the tidiness of this dish as opposed to messy regular hot wings. I will definitely do this again on game days. Great idea Chef John.

Brilliant! I tried something similar years ago, but it involved mixing in gelatin and making "buffalo cubes". We probably created the same flavors but yours is much more appealing to the eye!

For anyone who can’t tolerate spicy but loves the taste, try Moore’s (no, not related or affiliated) mild buffalo blue cheese, or regular mild buffalo sauce. It’s mild but sooo flavorful. I use it on regular bbq wings as a dipping sauce too. There’s a few excellent mild buffalo sauces out there.

honestly this is easy to warm up even when you don't want to microwave it. if it's an air tight seal you can submerge it into some warm water to slowly bring up to temp and then server piping hot if you so chose.

I do this already with boneless skinless thighs that I've stewed with sliced onions and whole garlic cloves. Adding some hot sauce and bleu cheese to the mix sounds delicious.

I have a recipe where you mix in blue cheese dressing to the chicken and hot sauce mixture, pop it all in a baking dish and sprinkle it with cheddar cheese then bake. I serve it with celery sticks and crostini. It's soooo good. I'll have to try it this way, too.

Take the leftover soft chicken (or turkey) skin and crisp it to golden brown in a low metal dish or pan in the toaster oven at 300F or so. Comes out almost like bacon, well worth the effort.
