2 1000 ca marine batteries will fit comfortably in the engine bay. Just did it on my 2001. Does require washer relocation with a smaller unit.

Nice build but having drawers that can only be open from the rear can be problematic in bad weather.

How do you keep cool in the hot weather at night?

Could leave it running and just use the vehicles AC. I’ve done it before with no issues. Just make sure you check the oil level each day. A well maintained vehicle should be able to handle it no problem.
