@@MrRidleyDog I didn't say anything about that, why are you twisting words? When I say open minded I mean open to try foods they aren't familiar with. I've worked with people that would just eat "steak and potatoes" and wouldn't touch anything with spices or even regular rice.

Adobo is a dish cooked by the Filipinos way before Spaniards, one of the original ingredient is sea salt but when Chinese traders introduced soy sauce that replaced sea salt. When the Spaniards came they named it Adobo which came from the word adobar which simply means to marinate. This dish is a native Filipino one and the original ingredients are salt, Calamansi then later soy sauce and vinegar are added, then later on spices are added like black pepper and garlic. If you go to remote areas near the sea at provinces they still cook the original version which is with salt not soy sauce.

When I moved to the Philippines in 2014 the very first local dish I tried was adobo. My wife is from Thailand, I lived in Bahrain, we have traveled to many countries and our palates are very diverse. I was blown away. Not my favorite in the whole world, but so, so good and I would recommend it to anyone. It's one of those rare dishes that I think would appeal to anyone from anywhere.

Not entirely. While it was inspired by a Spanish dish, the Philippine version was created in PH using many different spices than the kind originally found in Spain and Mexico. Also I described it as a local dish which it most certainly is.@@carlosmante

This reminds me of my first job working in a kitchen at a sports bar. The pay was low, work was sweaty, and hours were long, but my co-workers were fun as hell. We would carpool to work together in hotboxed car, talk about drama in-between smoke breaks, and have a small garage parties after almost every shift. Cut to 10 years and 5 jobs later. I work at an office with better pay, but I'm nowhere near as happy as I was then. I find myself missing all of this. Thanks for triggering pleasant memories, man.

I have the same experience exactly. Started as a busboy/ dishwasher, moved to line cook, then eventually to sous chef in an rustic/ authentic Mexican restaurant. I left for university, then masters, now work as an architect. From time to time I would reminisce and remember the amazing times in the kitchen. I am satisfied with my career choice. But the kitchen was the most fun I have ever had in a workplace.

@@tdbn4599 Yeah, man. I don’t hate my job, but I hate having to walk on eggshells when I’m there. We had a saying, “If we’re not making fun of you that means we don’t like you.” That environment was so much more unfiltered. We said what we said without the fear of HR. We gave shit to each other, but at the end of the day, we were still chill. A great example of what I’m describing is this movie called “Waiting”.

My wife (Filipina) made chicken Adobo for dinner but she does not use Coke. She does make a yummy 7-up prawn dish. I can enjoy Adobo once a week no problem.

"Trivia for the day" Adobo is derived from the spanish word adobar which means marinade. It is a filipino dish named by the spanish colonizers in the philippines, so adobo is a Filipino dish named by spanish people. 😊

Nope! It is named in Spanish by Filipino's because we are colonize by Spanish that time. Adobar in Spanish means to marinate. In Filipino we call it adobo.
